This weekend just flew right on by for me. I mean I guess it always does, but this weekend in particular was extra fast despite the dreary weather that has become normal around here. (Which, PS is totally not like normal Texas weather!) I also can't believe that it is almost Valentine's Day already this week! We aren't too big on celebrating Valentine's Day, and usually just stay in and cook dinner at home! I do like to make a few treats around this time of year and if I can make them healthy in the midst of all of the sugar options that are bring thrown in our face, then even better! My gluten free cherry coconut protein bites are the perfect healthy last minute Valentine's treat to make!
So yesterday Parks started preschool y'all...I mean it's only two days a week, but it was still a huge day for him (and me) if I am being honest! I was full of mixed emotions as I dropped him off for his first day and you know what, he did great! The day ended up flying by for me and it was one of those days where dinner needed to be simple and fast! My easy chicken and veggie sheet pan dinner came to the rescue and is a regular around our house for just that reason!
Happy Friday and happy February friends! I am super excited that this weekend is Super Bowl weekend, mostly because of the food options that I get to plan out! I may be fighting a sore throat right now, but that doesn't meant that I don't plan on still enjoying my game day eats! Anyone else feel like January has been the longest month ever? I can't even pin point what has made it so long, but it just seems like it should be over already! I am 100% ready for a new month and since it has taken me until the end of January to really get back into my healthy routine I guess you could say February is going to be my official start to the new year! I love having healthy food items like granola prepped and ready to go in my pantry because it makes for such a yummy breakfast or snack! My coconut and apricot granola is such a great combination of flavors and textures and is packed full of good stuff for your body to keep you fueled all day!

Happy Monday! I hope you all had a great weekend! It was rainy all weekend here in Texas so we did a lot of cooking and hanging out, which is fine by me because there isn't a whole lot that you can do when the weather doesn't cooperate except make delicious food! And because we spent a lot of time indoors, I spent a little time planning out my Super Bowl menu for this coming weekend also! I want a good balance of healthy versus indulgent dishes and one dish that is 100% going to be making an appearance for the big game is my easy 5-ingredient buffalo cauliflower!
Currently I am about to watch This is Us and I know I have to get this post written before hand because if I try to watch it while I write this post, my computer keyboard will be covered in tears. Can anyone else relate? What is it about that show? One minute you are laughing, the next...a puddle full of tears. I love it though, I am not going to lie.
