Easy 5-Ingredient Buffalo Cauliflower

Happy Monday! I hope you all had a great weekend!  It was rainy all weekend here in Texas so we did a lot of cooking and hanging out, which is fine by me because there isn't a whole lot that you can do when the weather doesn't cooperate except make delicious food!  And because we spent a lot of time indoors, I spent a little time planning out my Super Bowl menu for this coming weekend also!  I want a good balance of healthy versus indulgent dishes and one dish that is 100% going to be making an appearance for the big game is my easy 5-ingredient buffalo cauliflower!  

Unless you have been living under a rock, you know that cauliflower is all the rage right now.  Cauliflower pizza crusts, cauliflower mashed "potatoes", cauliflower rice, cauliflower tacos..basically anything that is a carb or a protein, cauliflower can replace it.  I have yet to love any cauliflower substitute more than this buffalo cauliflower dish, I can tell you that!  I literally could put hot sauce on everything I eat, so I was super intrigued about making this recipe at home where I could get my wing craving satisfied and stay healthy while doing it!

This recipe is super easy with minimal ingredients and the fact that you literally toss the cauliflower with the marinade, place it on a baking dish, and that's it makes it even more appealing in my eyes!  I love this dish not only for game day, but also for any meal prepping that you might do!  It is easily reheated and can be thrown onto a salad, into a nourish bowl, or served as a side dish any night of the week! 

I can't wait for you to give this one a try guys, because I'm telling you that I am hooked on this spicy vegetarian dish that even non-vegetarians will approve of!  For real though, ever since creating this recipe a couple of weeks ago, we have eaten it every week since!  You have to make this dish as soon as you can, because it is that good!  (And I need us to be able to talk about our buffalo cauliflower addiction together!)

Ingredients:

  • 1 Head of Cauliflower, cut into pieces
  • 1/4 Cup Hot Sauce
  • Juice from 1 Lemon
  • 2 Tbsp. Melted Butter
  • 2 Tbsp. Avocado Oil
  • 1 Tsp. Kosher Salt (free ingredient)
  • 1/2 Tsp. Black Pepper (free ingredient)

Note:  Double hot sauce, lemon juice, and butter if you want extra sauce for after the cauliflower is done!

Directions:

  • Preheat oven to 425 degrees.
  • In a large bowl mix together hot sauce, lemon juice, butter, and oil and whisk to combine.
  • Toss cauliflower with the hot sauce mixture and then spread evenly onto a baking sheet.
  • Sprinkle evenly with salt and pepper .
  • Bake the cauliflower for 35-45 minutes until golden brown.
  • Serve with ranch or blue cheese dressing with a side of carrots and celery.
