Almost everyone I know is in full back to school mode and almost everyone I know is feeling a little more tired than usual this week (us included). Between new schedules, earlier rise times, and having to pack lunch boxes I know that getting dinner on the table can sometimes seem like more of a chore than ever! Easy dinners that everyone will love, that you can prep in advance, and that can be on the table in 30 minutes are essential for survival if you ask me! My easy lentil meatballs with homemade marinara are just the kind of meal that you will have the energy to make on even the busiest of days!
We love fish tacos, like really love them. Matter of fact they are one of my hubby's top requested meals for dinner! They seem lighter than other tacos making me feel not so bad about eating them and they are ready in under thirty minutes which is always a plus! I also happen to be very into turning my favorite meals into bowls lately, which is what I did with this recipe! I took everything I love about fish tacos and put it in a big bowl, sans tortilla! My coconut rice fish taco bowls with mango pico de gallo is going to be your new favorite easy weeknight meal!
I'll just never be the girl who can give up pasta. There I said it, I've tried before and I've failed, and I decided a life without pasta is just no life for me. You feel me right? That's why we are friends after all... I mean I'm not saying we should be eating it every day of the week, but when the craving hits, you most definitely should indulge! One of my favorite comfort pastas is macaroni and cheese because it brings me back to my childhood, my kiddo loves it, and I mean it's cheese and pasta after all...a match made in heaven. My easy 3- ingredient macaroni and cheese is going to change your life in the homemade mac-n-cheese game because it is so easy to make and is super creamy and delicious!
School is officially back in for most schools here in Texas and that means busier schedules for us too! The importance of easy weeknight meals is more essential than ever right now and I want you to know that I get it, and I am here for you! I love having easy and healthy pasta recipes for just the kind of nights where your kids are starving and mom and dad are exhausted! My gluten free Italian sausage and pepper pasta is just the kind of dinner that you are going to want to add in to you weekly routine that is easy enough to cook even on the busiest of nights!
Nothing makes me more proud and happy than when my toddler inhales a bowl of food that is really good for him! I made these lobster rolls yesterday and while Parks ate his deconstructed style with the bun on the side, he ate every bite of the filling and practically shoveled it in his mouth. That's how good these are guys! If you have never had a lobster roll I think you are going to love them! I will tell you that my hubby and I fell in love with lobster rolls while we were in Maine last year, and ever since coming back I kept saying I wanted to make a healthier version at home! I finally did it and put my own twist on them and the result was incredible! My lobster rolls with avocado, corn, and tomato salad are the perfect summer dinner for any night of the week!
There is a taco phenomenon going on right now and I have to say I am not hating it! I love all kinds of tacos...who doesn't right? We have breakfast tacos once a week in our house and sometimes will have another taco recipe for dinner all in the same week! My hubby would eat tacos all day, everyday if I would make them for him, and our toddler is just as crazy about eating them too! (Like father, like son!) I love making my favorite foods like tacos at home because I can control the ingredients and make them a bit healthier, which means we get to eat them more! One of my favorite easy and healthy weeknight meals that I make on a regular basis happens to be my easy fish tacos!
