After being out of town for a week, I spent the day yesterday meal prepping to help prepare for a week of getting back on track with work, school, and our regular routine! One of the first items up that I prepped was an easy pasta salad. Pasta salads are on of those dishes that I love making ahead of time because they make easy lunches and/or a simple addition to dinner! Another perk is that they just get better in the fridge after sitting for a day or two. I love that I can add a tons of veggies into the mix to bulk up the pasta along with whatever protein I want to add in whether that be beans, chicken, or cured meats! I am currently obsessed with my new favorite pasta salad which just so happens to use one of my go-to seasonings, everything bagel seasoning. Two years ago my hubby and I went to Maine and fell in love with haddock sandwiches. They were everything you could want in a fish sandwich and more. These haddock sandwiches were made with simple ingredients letting the fish shine through. They were not greasy at all and yet had a perfectly crisp crust on the outside. The bun was golden, dressed simply with tangy tartar sauce and crisp lettuce and pickles. Is your mouth watering yet? (Because mine is, and it’s only 7 am here.) Needless to say we had a haddock fish sandwich almost every single day on our vacation, even if it meant splitting one because we just couldn’t get enough! Nothing makes me more proud and happy than when my toddler inhales a bowl of food that is really good for him! I made these lobster rolls yesterday and while Parks ate his deconstructed style with the bun on the side, he ate every bite of the filling and practically shoveled it in his mouth. That's how good these are guys! If you have never had a lobster roll I think you are going to love them! I will tell you that my hubby and I fell in love with lobster rolls while we were in Maine last year, and ever since coming back I kept saying I wanted to make a healthier version at home! I finally did it and put my own twist on them and the result was incredible! My lobster rolls with avocado, corn, and tomato salad are the perfect summer dinner for any night of the week!
Summer isn't officially here, but I feel like it has already made it's way to Texas! Blazing hot days have me craving all of the light dishes I can get my hands on!
