Curry Chicken Salad

Chicken salad couldn’t be any easier to make and having it on hand in the fridge for easy lunches always sets my week up for success. I love taking a rotisserie chicken and turning it into an easy chicken salad recipe that is healthy and filling. Curry chicken salad is a fun way to mix up your regular chicken salad recipe and is so full of flavor. It’s the perfect healthy lunch that is great for on the go or at home. This recipe for curry chicken salad is one that I have been making over and over again and I know you are going to love it too.

For a while I was buying a curry chicken salad from a local grocery store and while it was delicious, the cost for a small container was the price of a whole rotisserie chicken so I decided to start making my own version at home for a more cost effective lunch option. Not only is making this recipe at home more cost effective, but it also makes about three times the amount of the store bought version which means I can make a batch and it will last all week long.

I love to add in some crunch with celery, apples, and a little onion, but feel free to add in any other ingredients that you may like. Something like sliced almonds or chopped pistachios would also be delicious mixed in. I always add raisins in for a little sweetness and for another texture component, and then make a delicious and simple dressing with greek yogurt, mayo, honey, curry powder of course, and some cilantro and lime juice for freshness! The mix is honestly so delicious and I love eating it simply over some mixed greens, in a sandwich, or my current obsession is slicing cucumbers and using them like crackers to scoop up the delicious curry chicken salad.

One thing is for sure, you are going to love making this at the beginning of the week to have on hand for a healthy lunch ready to go when you are.

Curry Chicken Salad

Ingredients:

  • 1 Rotisserie Chicken, shredded (skin and bones removed)

  • 1/2 Cup Diced Celery

  • 1/2 Cup Diced Red Onion

  • 1/2 Cup Raisins

  • 1/2 Cup Diced Apple

  • 2 Tbsp. Finely Diced Cilantro (optional if you don’t like cilantro)

  • 2 Tbsp. Mayonnaise

  • 1/4 Cup Greek Yogurt

  • 1 Tbsp. Honey or Maple Syrup

  • 1 1/2 Tsp. Curry Powder

  • 1/4 Tsp. Garlic Powder

  • 1/4 Tsp. Turmeric

  • 2 Tbsp. Fresh Lime Juice

  • 3/4 Tsp. Kosher Salt

  • 1/2 Tsp. Black Pepper

Directions:

  • Add chicken, celery, onion, raisins, apples, and cilantro to a large bowl.

  • Combine mayo, yogurt, honey, curry powder, garlic powder, turmeric, lime juice, salt, and pepper and whisk until smooth.

  • Add the dressing do the other ingredients and toss until all is coated with the dressing. I like to start with half of the dressing and then add the rest if needed.

  • Serve immediately or store in the fridge for 3-4 days.
