Dare I say that I can finally feel a hint of fall? The air is definitely changing here in Texas, even though it is still pretty hot compared to some other parts of the country, it's feels pretty great to me. I had the windows open all weekend and definitely felt the fall baking bug and soup cravings hitting me hard. Anyone else have this happening right now? My roasted butternut squash and apple soup with sage oil is going to cure your soup hankering by giving you a hug from the inside!
They always say don't blink because it all passes so quickly, and at the time when you are tired from sleepless nights, you are covered in spit up, and can't quite remember what your old body felt like...it's hard to see how that could be true. Well I blinked and here we are one year after our lives changed forever, and Canean Parks Chatagnier was born. Just like that, truly in a blink of an eye, a whole 365 days have passed. Our baby boy who struggled while taking his first breaths and came into our lives rather traumatically, is vibrant and so full of joy that he brightens our days more than he will ever know.
Yesterday the weather didn't get above ninety degrees which means it's officially feeling like fall here in Texas. Fall for us is pretty hot still, but I'm telling you below ninety feels amazing right about now. Since the weather is still a little warm, and I'm a firm believer that ice cream and popsicles should be consumed year round, I made you the perfect fall popsicle that can be enjoyed in forty degrees or a hundred. To top off the cooler weather this week, I also received the most gorgeous package in the mail from JORD Wood Watches. Cooking and keeping a watch on the time go hand in hand and it sure doesn't hurt that this watch happens to be gorgeous in every way!
I have been slacking in the meal prepping department for Parks. I was so on my game at the beginning of the solid food stage and then he got really mobile and I found it super hard to find the time to go pee, let alone fix his homemade meals. Since we entered the can't sit still stage, I won't lie...there has been a hot dog or two thrown into the mix and maybe some mac and cheese...because some days I just need to get food in a hungry and fussy baby's belly and I need fast and easy. Yesterday however, I meal prepped for Parks because my mama guilt of not getting as many nutrients in him each day as possible was weighing heavy on me! Originally I made this dish for just him, and then after tasting the lentils I decided we would be sharing these lentils for a healthy lunch option all week!
I am stuck somewhere in the middle of needing fall to be here yesterday and not wanting to let go of summer and all of it's produce. Don't get me wrong I am beyond ready to feel the weather shift because this 95 degree business isn't cutting it for me! But, I also hate to say goodbye to long days, my favorite produce, and sun-kissed skin. We go through eggs like crazy at our house. Six out of the seven mornings in the week you will find eggs on all of our plates, Parks included. Scrambled, fried, poached, boiled, in omelette form, I love them any way I can get them! I am always trying to find new ways to cook them to switch things up, however this idea came from my hubby who happened to sprinkle a little taco seasoning on his boiled egg and couldn't get over how good it was.
