Easy recipes have been saving my life lately. Parks is officially on the move and getting into everything! I almost always eat my breakfast and lunch standing up in between chasing him around the house and needless to say, this mama is whooped by the end of the day. Pouring a glass of wine is sometimes all the energy I have left in me...truth. I make salmon once a week because, number one it is so good for you, and number two it can be ready in 12 minutes! That's why my recipe for easy salmon on the stove is perfect for any night of the week and especially for tired mamas.
Usually summertime is my favorite time of year. The produce, the tans, the dewy glow on your skin, the list goes on. This summer however, the heat is out of control. Is it always this hot and I have forgotten? Or is this global warming? Anyway you look at it though it's too hot to be outside unless you are going to be sitting in a pool with a cocktail in hand. And when it's this hot out, turning the oven on is unthinkable and meals are meant to be light and fresh! Yesterday was one of those days... We started off with a doctor's appointment for Parks in the morning which went great, but then messed up his nap schedule for the whole day. And by messed up I mean he boycotted naps for the rest of the day. This led to me chasing around a now mobile baby, eating two meals standing up, and trying to shoot two recipes all the while keeping a tired baby from being cranky! Needless to say I was ready for Canean to get home last night so mommy could have a break. Can I just say, thank goodness for cocktails and my mom's 5 o'clock citrus vodka soda!
Can someone please explain to me how it is almost July and how I am going to have a 9 month old baby? Where has the time gone? This year is flying by entirely too fast for me and I need it to slow down. We've had a lot going on the past month with Parks having surgery among other things and one thing that has been a lifesaver for me is easy dinners! I have been making lots of 30 minute meals lately because I just don't have time for much else! I am sure you can relate with kids home from school, vacations, and all of the other busyness that comes with summer. The days are disappearing and dinner time rolls around without any warning leaving your hungry family staring at you wondering what will be on the menu for the night. My Greek chicken pasta salad is going to be one of your new favorite easy meals that will fill up your "people" while keeping it somewhat healthy at the same time!
I've been back in the kitchen this week cooking for My Diary of Us (finally) and dang, it feels good. With so much going on in my life right now, both work and personal, I have been neglecting this space that I have always loved coming to. I'm jumping back in with baby steps and just kinda feeling my way back into the groove of it all.
