I am super excited to start sharing my excitement of making homemade baby food with you! It's only taken me 3 months, but I am finally sharing one of my easiest, first-stage homemade baby food recipes! I'm not gonna lie guys, I have been really struggling trying to get my game together here on My Diary of Us! Between finishing the cookbook, taking on two other major freelance photography projects, and keeping up with a growing and curious boy, I have been having a hard time balancing my time here with you! I promise I will get better, but thank you for your patience in the meantime! Anyway...let's talk about these cinnamon apples, shall we?
t's raining cats and dogs here in Texas and the sun isn't supposed to show it's face to us again until Friday...bummer dude. I am not one of those people who likes rain for more than about a day because I crave sunshine like I crave chocolate. I need it for energy, a good mood booster, and I tend to eat healthier when the sun is shining. When it rains, I want comfort food and to stay in my pajamas all day, if I'm being honest. Recipes like these Indian spiced cauliflower steaks save me when the weather gets dreary because it satisfies my need for comfort food while not derailing my diet.
Do you have those go-to recipes that you make over and over? I know I do, and especially now with a baby, having my favorite easy recipes in the back of my brain at all times can be a lifesaver on hectic days. I tend to make lots of salads these days, mostly because I can whip one up with whatever ingredients I have in the fridge on any particular week. That being said, I also get a little bored with salads and need to throw in a different salad from time to time. My easy taco salad is one of those salads that I tend to forget about, but every time I make it I'm like "dang this is so good, why don't I make this more often." So here it is, the salad that will change your outlook on weeknight salads and I promise even your hubby (and kids too) will be super pumped about having this for dinner on a weekly basis!
Last week was a blur. Luckily my mom was here, otherwise we might not have made it (or I might not have made it.) I had to make the decision to put my 11 year old pup down very unexpectedly and it hit me hard. He was my first baby and had been with me since I graduated college. Needless to say, I was a little distracted and emotionally drained last week with losing my best friend, plus Parks is a little wild man these days and goes non-stop unless he is asleep which left me little time to spend in the kitchen! Let me tell you, when life hits hard, having a recipe like my healthy chocolate chip pecan muffins can make or break whether or not I start my day off right.
This week started out a little rough, I am not going to lie. Parks had his first tumble and hit his little nose on the coffee table pretty good leaving a little bruise and scrape and basically scared me to death. He was fine after he calmed down, and I on the other hand was shaken for the rest of the afternoon and was sure we needed to go to the doctor. It was a long day , and on days like Monday (or any day really), easy dinners are necessary and there isn't anything more simple than whipping up a fantastic salad. My pear, goat cheese, and pork tenderloin salad is literally on weekly rotation in our house and you are going to love it too!
I love burgers. In fact, there are few foods that hold a more special place in my heart than that of a burger. True story, but unfortunately most burgers do not go hand in hand with my "get back to pre-baby body" game plan. I did say most burgers though didn't I? Well that is because one of my favorite ways to satisfy my on-going burger craving is to fix a turkey burger in place of the traditional beef burger. My easy baked turkey burgers take care of my cravings without killing my diet.
