Christmas Brunch Favorites

I honestly cannot believe that we are a week away from Christmas already!  This year went by so quickly guys, I literally cannot get over it.  We are heading to my parents house this week and I am so ready for a little vacation and downtime with my family!  My mom is one of those people who just makes Christmas so magical, which is why it has always been my favorite holiday.  So many memories of family traditions including delicious meals are still so strong in my mind!  I hope that I can make Christmas just as magical for Parks year after year so that he grows up with the same love for the holidays!  One of my most favorite meals during the Christmas season is brunch!  I love starting the day off with a yummy meal that, besides the obvious cheese board that will most definitely happen, will keep our tummies full until dinner rolls around!  I've rounded up my top Christmas brunch favorites so that you can host the ultimate brunch for your family and friends this year!

I don't know about you, but I am in full holiday mode over here.  Christmas music is on repeat and holiday touches are being added to the house and to all of my recipes!  I love this time of year so much that I literally can't handle my excitement for this season!  To me breakfast is the most important meal of the day all year long, but especially during the holidays!  Starting with my morning cup of joe, to the plate that is in front of me, I need all the fuel to get me through holiday shopping, decking the halls, and keeping up with normal life at the same time (hello mom life)!  My Easy Sugar Cookie French Toast is the perfect breakfast to make all season long and goes perfect with your favorite coffee of choice!

With the holidays in full swing that means family and friends will filling up your guest rooms and there will be more than the usual mouths to feed!  To me, besides the main course at dinner, breakfast is the next most important meal to prepare for all of your loved ones!  It sets the tone for the rest of the day and keeps everyone's bellies full and happy until it's time for the next meal to roll around.  With all of the hustle, bustle, and added chaos to your household, any breakfast that is easy to whip up is a winner in my book!  My salsa verde egg, sausage, and potato breakfast enchiladas are so delicious and can feed all of your friends and family with no problem!

Easy Cranberry Skillet Cake

Let's talk Thanksgiving guys because after all it's officially less than two weeks away!  Are you hosting at your house, are you going to a family or friend's house?  Whatever the case may be I bet you have to contribute at least one thing to the meal am I right?  And sometimes figuring out what that should be can be tricky, but I got that covered for you this year!  My easy cranberry skillet cake is rustic and beautiful and is seriously simple to make even for us non-bakers (yep including me in that category)!

Gluten Free Pistachio Cranberry Protein Bars

Last night I was watching The Voice and trying to talk myself out of going into the freezer and snagging one of these delicious bars.  Which, in all honesty wouldn't be so bad except I made a deal with myself that I am not eating snacks after dinner this week (whyyyy???) so I am trying to keep my pact with myself.  But when a snack is slightly sweet, filling, and on the "healthyish" side a girl could be convinced to break the no snack rule very easily!  Cue my gluten free pistachio cranberry protein bars that just so happen to be the perfect snack to keep on hand for any time of day, especially for that pre-bedtime, I want to eat something hour.

Delicious Whole Wheat Pumpkin Waffles

Happy Monday guys!  I seriously cannot believe that tomorrow is Halloween!  This weekend we enjoyed some gorgeous fall weather, I made a big pot of gumbo, and we spent lots of time outside!  We haven't done much of anything for Halloween yet, but are headed over to trick or treat with some friends tomorrow night!  I feel like Parks is still a little young to really understand it all, but I am sure next year will be a whole other story!  And because pumpkin season is in full swing and I want to know, are you still on board with pumpkin spice everything or are you like please no more pumpkin?   I am really hoping it's the first option, because I have turned my favorite waffle recipe from my cookbook, First Bites, into the most delicious whole wheat pumpkin waffles that you are going to want to make from now until Christmas!
