Growing up in the South, biscuits are considered a breakfast essential in most family households. Still to this day, when I take a bite of a homemade biscuit, I feel a sense of nostalgia and cooking in the kitchen with my mom covered in flour. Because if you are making your biscuits from scratch, you should be covered in flour...it goes with the territory. So when King Arthur Flour asked me to be a part of their Better Biscuit Campaign, how was I supposed to say no? Of course I said yes and debated long and hard about what kind of biscuit I wanted to make you. When it came down to it, I had to go traditional, because to me there is nothing better than a perfectly baked warm biscuit slathered in something yummy. These homemade flaky biscuits with lavender honey butter are going to rock your world in so many ways and I can't wait for you to try them out.
Lately if my fridge isn't stocked with go to healthy options, you can find me eating whatever is in reach and that is not a good situation! I don't have the patience to fix something, or to think about what I want, so prepping my food in advance has been key during this pregnancy! Honestly it's a great practice to get in the habit of even if you aren't pregnant, especially if you are trying to stick to a healthy eating plan! I feel like I've been seeing frozen bananas in recipes everywhere right now. You can make ice cream with them, freeze them for your smoothies, and now you can add making healthy banana pops to the list! If you are someone who always finds them self not eating breakfast on the regular, chances are it's because you don't have time right? I got news for ya people, and it's probably not the first time you've heard it...breakfast is the most important meal of the day! I literally couldn't function without it!
Tropical Storm Bill delivered us heavy rains all week long. Today is the first day since Sunday that there isn't a 100% chance of rain all day. It has been gloomy and wet and I am in need of a dose of sunshine and a long walk outside asap! Even though the rain has stopped it doesn't look like the sun is going to make it's appearance just yet. Whon whon...so in the mean time, I will just be over here drinking my watermelon, coconut, and lime smoothie pretending that I am somewhere outside on a beautiful day!
Y'all already know that one of my top pregnancy cravings lately has been watermelon. We go through at least two a week because I can't stop my hands from grabbing a few pieces every time the fridge door opens. I've been eating it plain, with salt, in salads (like my watermelon, cucumber, and mint salad), and lately my new favorite is putting watermelon in my smoothies!
Did anyone else's weekend fly by? I don't know why this comes as a surprise to me week after week, but it never fails every Sunday night I find myself moping around at the fact that the weekend is coming to a close again. It's not even that Mondays are really all the bad for me. They consist of meal planning, email responses, and shooting recipes. All of which I don't mind doing one bit and one important step to my weekday productivity is always a good breakfast. If I don't start out the day with a good meal, I can pretty much kiss my chances of my brain working properly goodbye. My open-faced egg sandwich with arugula pesto is just the kind of breakfast that will fuel my day!
Everybody has a favorite smoothie. There are a bajillion smoothie recipes out there and you can really put just about anything you want into a blender and come up with your own version of a smoothie. I know that, I know that you might not really NEED my recipe for my favorite smoothie too, but I'm going to share it with you anyway. Humor me... My pineapple, strawberry, and spinach smoothie is the perfect breakfast/afternoon pick me up and lately with the weather getting warm I could drink one everyday.
I'd understand if you were a little upset with me, after all your family is probably a little hungry considering I haven't posted a recipe in two weeks. But let me tell you, the past two weeks have been a whirlwind with the move and getting the house unpacked. The good news here...I am finally settled and am getting back into my normal routine! I figured since I haven't posted anything delicious in a bit, I would come back with a recipe that you will love and that can make any Monday better! One of my loveliest friends, Renee, was kind enough to share her recipe for banana bread with me about a month ago and I am telling you guys this banana bread is the real deal. You are going to want this for breakfast and a cup of coffee everyday this week. Renee's banana bread is the best I've ever tasted/made and you need a loaf in your life, preferably sooner than later.
