The Best Tuna Salad

Tuna salad is way underestimated in my opinion. I make a batch at least once a week and it’s hands down one of my favorite healthy lunches! Everyone has their own favorite way to make tuna salad, but I learned this recipe from my mama years ago (she learned from her dad), and I might be biased, but our recipe truly is the best! I season mine with old bay, a classic seafood seasoning, and put lots of crunchy goodness in there for texture and flavor. Tuna salad is so great for meal prepping, which is why I tend to make this recipe almost weekly. Do yourself a favor and make the best tuna salad you’ve ever eaten by following my simple but flavorful recipe!

Chickpea BLT Salad with Cilantro Dill Yogurt Dressing

With Spring on the brain, I am suddenly in the mood for all sorts of salads and color on my plate! It has been unusually cold here this week in Texas, but that does not change the fact that I have been day dreaming about sunny Spring days that are in the very near future! While wintery meals tend to be more laborious, I love how with the switch of seasons, meals become more simple and effortless. Simple salads are one of my favorite things to make at this time of year when the days gets longer and the weather gets nicer! Even better, are salads that can be prepped in advanced and eaten throughout the week for easy lunches or dinners! Healthy Eating Meal Plan Week One

Spinach and Artichoke Grilled Cheese

I'm here to let you know that I am extending the weekend another day!  And yes I have the authority to do that.  This weekend went by too fast, which it always does, but this weekend really sped by and I am just not ready to go into full on weekday mode today!  So today I am challenging myself and you to do one thing for yourself that  you wouldn't normally allow yourself to do today.   Self-care Monday should totally be a thing if you ask me!  Take a bubble bath in the middle of the day, read a book for a little while, take a power nap, whatever it is..do it!  I need that today, and I am guessing so do you!  And you know what else we need today?  A little comfort food, so let's make ourselves a spinach and artichoke grilled cheese and call it a day!
