Somewhere along the way, my kiddo decided that he HAD to have a donut every time we were at the grocery store. I mean, I am all about a donut every now and then but y'all...I go to the grocery about 2 or 3 times a week! That is too many donuts for anyone in one week, especially because I try to limit the amount of sugar we get! So because of his new obsession with this very unhealthy food item, I decided to make us a healthier version at home! I love creating my own version of foods that are indulgent right in my own kitchen because I can control the ingredients! My healthy carrot cake donuts are perfect to make in advance for all week long and you can feel good about your family eating them!
We love fish tacos, like really love them. Matter of fact they are one of my hubby's top requested meals for dinner! They seem lighter than other tacos making me feel not so bad about eating them and they are ready in under thirty minutes which is always a plus! I also happen to be very into turning my favorite meals into bowls lately, which is what I did with this recipe! I took everything I love about fish tacos and put it in a big bowl, sans tortilla! This week I managed to take my child to school on a day that he didn't in fact have school (I may have almost cried), on top of that Parks has woken up at 5am or somewhere in that time frame every single day leaving me feeling more tired than usual, and it seems like I can't get into my routine this week!
