This week I managed to take my child to school on a day that he didn't in fact have school (I may have almost cried), on top of that Parks has woken up at 5am or somewhere in that time frame every single day leaving me feeling more tired than usual, and it seems like I can't get into my routine this week! Do you ever have weeks like that where you just feel off? (Please tell me I'm not alone here.) Thank goodness for easy recipes that save the day when my brain clearly isn't working so I don't have to put much effort into creating a delicious recipe that the whole family loves. School is officially back in for most schools here in Texas and that means busier schedules for us too! Over the weekend, we went to Louisiana to see our new niece who was just born! It was a whirlwind of a weekend and we were all pretty much wiped out last night when we got back home. After a good night's sleep, I am waking up feeling ready for the week! And it's a BUSY one! One of the ways I prep for a busy week is to make a batch of energy balls! My new favorite combination of flavors and ingredients is my chocolate coconut energy balls that taste delicious and are the perfect snack to get you through the afternoon slump!
I cannot believe August has arrived and back to school has already started! Where did the summer go? But let's be honest, summer actually isn't over yet is it? The heat is still sticking around and we still have a good month or two left of some of my favorite summer produce! Last week I made a random salad based upon what I had in the fridge, and omg guys...it was one of the best salads I have made in a long time! I knew that I was going to have to make it again, and that I needed to let you guys in on this amazing salad combination too! My grilled bbq chicken and peach salad is the quintessential summer salad and it needs to be on your dinner table asap while the gettin' is good!
During the week I love making dips that I can serve with lots of veggies for healthy snack options in a hurry. One of my favorite dips to have on hand is hummus. It's full of protein and pairs perfectly with a plate full of veggies that my toddler will eat right up! I love switching up my basic hummus recipe from time to time and like to add fun spices and flavors. My everything bagel hummus just might be my new favorite hummus of all time!
Nothing makes me more proud and happy than when my toddler inhales a bowl of food that is really good for him! I made these lobster rolls yesterday and while Parks ate his deconstructed style with the bun on the side, he ate every bite of the filling and practically shoveled it in his mouth. That's how good these are guys! If you have never had a lobster roll I think you are going to love them! I will tell you that my hubby and I fell in love with lobster rolls while we were in Maine last year, and ever since coming back I kept saying I wanted to make a healthier version at home! I finally did it and put my own twist on them and the result was incredible! My lobster rolls with avocado, corn, and tomato salad are the perfect summer dinner for any night of the week!
