I don't know about you, but my mama always taught me to salt my melons. It can take a mediocre melon to pretty dang good with just a little sprinkle. To me there is nothing that says summer more than a cold slice of watermelon sprinkled with just the right amount of salt. It's the perfect snack, although I can literally eat my weight in watermelon, which actually can turn into a problem. I mean...I guess if you are going to be addicted to a food, fruit is one of the better options, but still y'all...I have ZERO self control when it's a good one! I will tell you that I have found the perfect way to add a little pizazz to your next watermelon that will be a hit at any BBQ or picnic! Happy Thursday guys! One more day to get through until the weekend and I am already dreaming about refreshing cocktails because it has been getting hotttt y'all! And when the weather is hot outside there are only two things that sound good and those are being near a body of water and/or drinking a refreshing cocktail. I wouldn't consider myself a non-computer person, but I also would not consider myself a savvy computer gal. I get by and know how to do the things I know how to do...you know what I mean? Anyway, I have been putting off creating food recipe videos for a while because it is out of my comfort zone, but yesterday I decided to bite the bullet and create my very first video with a super simple recipe that happens to be one of my favorite side dishes! We played in the sprinkler, Canean cooked dinner for me (grilled BBQ crabs and oysters Rockefeller...whhhatttt!) He definitely spoiled me this weekend and I took full advantage! Today I'll be back in the kitchen and catching up on a week from being out of town. Anytime I have busy weeks like this I am always looking for easy meals that taste amazing. Happy happy Monday friends! How was your weekend? We had a great visit to Louisiana where we ate too much (as always), got to see friends and family, and came home yesterday to a gorgeous Texas afternoon! We spent the day in the backyard soaking up every second of the perfect weather that is for sure not going to stay around for very long! It's days like these where simple meals to me are the best meals. One, I don't want to take too much time in the kitchen away from my guys and two, days like yesterday make me want to eat a light and fresh meal that the whole family will be a fan of. My easy roasted asparagus pesto pasta is so perfect for any night of the week and you are going to love how simple this recipe truly is.
It's almost the weekend! I can taste it, can you? We are headed to Louisiana for the weekend to hang with friends and family and feast ourselves on my father-in-law's famous crawfish. To say I'm excited about his crawfish would be an understatement...I literally eat more than every grown man at the table! There are a few things in this life that I will change my plans for and one of those is a crawfish boil...the other happens to be champagne. Just mention the word and I am there! One of my favorite activities on the weekend is brunch and I think half of that is the fact that I can drink mimosas before noon and it is 100% acceptable. And what's even better than that is a mimosa turned into a popsicle! My mimosa pops swimming in even more champagne are the perfect addition to your at-home brunch plans this weekend!
