Is it just me or does the week following a holiday seem like the longest week ever? I have no idea how it is not Friday yet, and I am just trying to get through one more day! To top it all off, Canean has strep throat and a double ear infection so I am on solo parent duty all weekend. Don't even get me started on how I have been a mad woman running around disinfecting the house trying to make sure that Parks and I don't catch it too. Lysol mania is is FULL effect around here. Needless to say, a cocktail (or three) is just what the doctor ordered! My rosemary cran smash is the perfect drink to not only calm those "why isn't it Friday yet" nerves, but you can also use up any of your leftover cranberry sauce from Thanksgiving!
Thanksgiving is over...did you make it through? Are you still in stretchy pants? Because it's totally okay if you are. If you had a week anything like mine, you are probably trying to get back on a the healthy diet bandwagon (if not for only a few weeks before Christmas) and are looking for recipes that aren't lacking in the flavor department. Happy Thanksgiving week guys! I cannot believe that it is already that time and I haven't even been to the grocery store yet! I get a little bit of anxiety about getting to the store and beating the Thanksgiving rush of shoppers, afraid that they might buy all of my ingredients before I have a chance to. Does that happen to anyone else or am I just OCD? We were out of the town last weekend for my sister-in-law's wedding so I didn't get to the store during my usual time frame! Nevertheless, I will be shopping for ingredients today and one thing is for sure, I will be getting everything I need for my simple and creamy mashed potatoes.
The weather has turned only slightly here, but there has been a new crisp evening air that has me craving all things comforting for dinner. Something somewhat healthy, that is warm and full of flavor is usually what I try to make! Soups are so good for just that because you can make them ahead and eat on them all week for easy dinners and for the most part you can control the ingredients keeping them as healthy as you and your family want them! My easy white bean, smoked sausage, and kale soup is just the kind of meal that I crave on a weekly basis!
Happy Monday guys! We are officially ten days away from Thanksgiving and I am pretty darn excited about it! Everyone has a favorite dish that makes or breaks a good Thanksgiving meal, and for me that dish is stuffing...or dressing...or whatever you call it. My homemade sausage stuffing is honestly my favorite part of the entire Thanksgiving meal. It's the texture, it's the flavor combinations, it's that combined with a bite of turkey it is just the perfect Thanksgiving bite wrapped into one! To me, if there is one dish to make to go alongside your turkey this year, it's gotta be my homemade sausage stuffing!
