You guyyyysss...Thanksgiving is officially two weeks away! Are you freaking out? I have a confession...I am not freaking out at all because this year it's just me and my boys at home by ourselves! That doesn't mean that I am not going to be making a full on spread, because hello leftovers, but it just means there is no pressure because I won't have a house full of people! I will however be whipping up cocktails! My pomegranate ginger sparkler is the perfect festive cocktail for your holiday menu!
Happy Monday guys! How was your weekend? Ours was so great and spent mostly at home just hanging out. It was perfect and as always, went by too fast! I am also hitting the reset button on in the meal department because this weekend I definitely ate too many pumpkin bars and some of that lingering Halloween candy that needs to go. To get back on track, I am whipping up my healthy butternut squash, apple, and kale salad with spiced pecans to eat all week long!
Hallelujah it's Friday! This week has been dragging on and I have been waiting for today since Monday it feels like! I was out of town last weekend, so I am beyond excited to spend thia weekend with my guys. We have a pumpkin party that we are going to where there is a pumpkin recipe contest. I am pretty pumped about getting to make my famous pumpkin bars, as well as a new pumpkin dip that I am testing out too! Other than that, we have a whole lot of chilling on the agenda. I am about to get super busy with a new project that I can't wait to share with you so this will be my last weekend for a while not working. I plan on making pumpkiny things, a big batch of soup, and these super easy chocolate mousse cups and you should too!
Y'all, I did it! I had my first cooking demonstration last weekend, made it through, and actually had an amazing time! I have to say I was a little nervous because I have never done this sort of thing before, but the crowd was amazing and everything went as smoothly as I could have hoped for! It was a whirlwind of a weekend, and while it was so much fun, I am dragging this week. I am already counting down until Friday. Give me all the caffeine please and give it to me now! One of my favorite ways to get some good energy first thing in the morning is to drink butter coffee. I drink it every morning before the gym and decided to give it a little twist. My pumpkin spice butter coffee is so delicious and in my opinion, it is better than any pumpkin spice latte that you could ever hope for!
I am always looking for ways to cheat my way into satisfying my cravings. It's a trick I love to do because I refuse to give up the foods that make my belly do a happy dance! Whether it's my favorite pasta, burger, or ice cream I can guarantee I will find a way to cut some corners to make it an acceptable part of my weekly meal plan. Fried chicken is no different and because we seriously hardly ever indulge on the real thing, my easy and healthy breaded chicken is the golden ticket in satisfying my tastebuds.
Happy Monday! This week is a super busy week for me! We have Parks' follow up doctors appointments for his kidney (please say prayers that everything is healing just the way it should) and I have so much to do before leaving to go to Baton Rouge for the Louisiana Book Festival to do my first ever cooking demo and book signing!! I am excited and nervous...and more excited. In addition to this week being super busy, the weather has shifted and it no longer feels like fall...whomp whomp. Don't worry though, to keep myself in the fall spirit, I am cooking with all the fall flavors I possibly can! My apple, bacon, and pumpkin pan pizza with caramelized onions is seriously so delicious and screams fall in the best way!
