Pumpkin Spice Butter Coffee

Y'all, I did it!  I had my first cooking demonstration last weekend, made it through, and actually had an amazing time!  I have to say I was a little nervous because I have never done this sort of thing before, but the crowd was amazing and everything went as smoothly as I could have hoped for!  It was a whirlwind of a weekend, and while it was so much fun, I am dragging this week.  I am already counting down until Friday.  Give me all the caffeine please and give it to me now!  One of my favorite ways to get some good energy first thing in the morning is to drink butter coffee.  I drink it every morning before the gym and decided to give it a little twist.  My pumpkin spice butter coffee is so delicious and in my opinion, it is better than any pumpkin spice latte that you could ever hope for!

The good news about pumpkin spice butter coffee is that is really good for you and there are no artificial sweeteners and weird ingredients involved.  So if you are wondering what in the world butter coffee is, it's exactly that...butter in your coffee, well unsalted grass fed butter in particular because it is loaded with Omega 3's and Omega 6's. 

The unsalted grass fed butter combined with the MCT oils from the coconut oil rev up your metabolism and give your body healthy fats that give you a tremendous amount of energy and get you ready for the day.  When you blend these fats with the coffee, it gets creamy and very latte like!  This coffee is particularly good for someone who has a hard time eating breakfast in the morning.  

I used to be a breakfast every morning kind of person, but now that I fix Parks' breakfast and have to scoot out the door in time to make it to a gym class, butter coffee has been a lifesaver!

Ingredients:

  • 2 Tbsp. Pumpkin Puree
  • 1 1/2 Cups of Black Fresh Coffee
  • 1 Tbsp. Grass Fed Unsalted Butter (I use Kerrygold)
  • 1 Tbsp. Coconut Oil
  • 1 Tsp. Maple Syrup
  • 1/8 Tsp. Pumpkin Pie Spice

Directions:

  • Place all ingredients into a blender and blend until the coffee is frothy.  
  • Serve immediately.

I am telling you guys, this coffee is amazingly satisfying and I think you will love it if you give it a try!  Let me know what you think!
