I have let y'all down this summer. I usually have at least a couple ice cream and popsicle recipes for you to make during this time of year and well, I have just been off my game. Not sure if that is a good enough excuse, but I am hoping to make it up to you by gifting you with a really really delicious homemade ice cream recipe! Unless you have been living under a rock, you probably have seen some kind of footage from the floods in Louisiana. My husband's family, our dear friends, and thousands more have lost so much in this tragedy that occurred over the weekend. I have been almost feeling guilty about posting my regular food, because honestly it seems kind of silly considering what is going on in South Louisiana right now. But...then I got to thinking that if I was there, I would be trying to feed people because it's what I do, and a good plate of hot food can always make people feel better. So here is a colorful dish that is one of the most delicious things I have ever made, I kid you not. Oh man it's been a week guys. I am so desperately trying to get back into doing multiple recipes each week for My Diary of Us, and if I'm being completely honest, it's been a challenge with my little dude following me around everywhere. Don't get me wrong I love him more than anything, but man he can wear a mama out. I would be lying if I said there weren't days when I await the five o'clock hour to approach so I can have a cocktail and to see daddy walk through the door! My single serving stone fruit sangria is the perfect cocktail to whip up any night of the week and now you don't have to make a pitcher of it to enjoy one of your summertime favorites!
Ummmmm, how is it August already guys? The summer is passing entirely too quickly and although I'm ready for the heat to leave, I am not ready for the idea of summertime to go away! I am holding on to all things grilled, fresh, and easy and pretending like we are not officially one and a half months away from Parks turning ONE! Holy moly! That's a whole other subject though, so let's stick to why we are here and that is for the pork! Grilling pork chops is one of the easiest and healthiest ways to prepare the meat and though it can be tricky, my method of perfectly grilled pork chops will give you a juicy chop every time!
Grilling is my jam guys. I will grill in the cold, in the rain, in the extreme heat, whatever...I love it. I love the smokey flavor that comes from grilling and when we are currently in the heat of summer, who wants to turn on an oven? Because of that, salads are on rotation in our house right now and this Sriracha honey glazed grilled shrimp salad is one we have been having over and over!
Is anyone else obsessed with tomatoes right now? Every year when summer rolls around and tomatoes get sweet and delicious I try to eat all the tomatoes that I can get my hands on! When I was pregnant I ate at least three tomatoes a day with garlic salt and had to make myself stop so I wouldn't get a mouth ulcer! Lately, I have been putting tomatoes into everything like my Greek Chicken Pasta Salad, Panzanella Cantaloupe Caprese Skewers...and now even my cocktails! My tomato basil crush is going to have you loving tomatoes in a whole new way!
