I have a confession, I am not really back into the kitchen yet. This recipe was one I made and shot before giving birth that I had planned on blogging before I went into labor. And I'm so glad I had it on the back burner to have ready to go post baby because last night was my first night back in the kitchen in over a month! Easy dinners are an absolute essential for me right now, especially because Canean has been having to do some of the cooking while I have been in recovery/new baby mode! My spinach, sun-dried tomato, and goat cheese stuffed sweet potatoes are the perfect easy dinner or side and happen to be packed full of nutrients and can be ready without breaking a sweat.
'm baaackkk...well kinda. I am not fully back into working mode, but am slowly but surely easing my way back into it. I wanted to tell you about my first month with new baby and fill you in on Parks's birth story while it was all still fresh on my mind! I honestly cannot believe that it has been a month since he was born. Time is flying by at a scary pace. This month has been the hardest, best month of my life and I just can't believe Canean and I have been blessed with such a sweet little boy that we get to call ours forever.
Last year I partnered with the talented ladies of Five Seasons Cooking to photograph and style their delicious recipes for their debut cookbook! After long hours and lots of hard work, Five Seasons: A Guide to Seasonal Cooking was released on September 18th! The result is a gorgeous, coffee tale worthy book filled with amazing recipes inside.
The book is broken down by season using all seasonal and fresh ingredients that you can find at your local market or grocer throughout the year. The recipes are easy to follow, and I have no doubt that it will become one of your new favorite kitchen essentials! Being there to photograph the food, I can attest to the fact that everything in this book tastes amazing. I literally tasted almost every recipe and love them all!
Fall has officially arrived surrounding me with thoughts of fall fashion, pumpkin everything, and the hope of some cooler weather arriving to Texas in the near future. I love this time of year. The colors, the food, the energy from everyone else's excitement for the season, and this year the anticipation of our baby boy's arrival! Speaking of, we are officially one week and six days out from his due date! Crazy town! My cravings have been carb heavy lately or anything pumpkin related so I combined my two obsessions and created this delicious and easy brown butter and sage pumpkin ravioli with walnuts!
This meal is decadent, everything you love about a fall cozy meal, and is just absolutely delicious!
It seems like just yesterday that I took that pregnancy test, knowing it would come back positive this time. I waited for Canean to leave for work and then immediately took the test. That day was one of the longest days of my life waiting for him to come home that afternoon. We had been trying for a while with no luck, so I wanted it to be a surprise. He came home rattling on about something with a house in Texas that we were thinking about buying at the time and I thought he would never let me get a word in! Finally I interrupted and told him I had a surprise. I made him close his eyes, and gave him a piece of paper on it where I told him in a not so obvious way that he would be dad. We both cried, were in shock, and felt incredibly grateful that God would give us this gift. Fast forward to 9 months later and we are two weeks and two days from baby boy's due date and it all seems so surreal to me.
Every year I wait for fall for when I can make all things pumpkin. Everywhere I go it's pumpkin this and pumpkin that. When everything screams pumpkin, I really can't be blamed for hopping on board with this whole pumpkin palooza going on right now. When fall rolls around fall beers of all varieties are released, out comes about a bajillion kinds of pumpkin beers. And since the weather is still on the warmer side here in Texas I thought a pumpkin and orange beer shandy sounded absolutely delicious right about now!
