Strawberry Balsamic Grilled Chicken

We've been on a salad kick lately and one of our favorites combinations includes strawberries and chicken. There is something about the combination of sweet and savory that makes this salad the best. You might remember reading my strawberry, avocado, and walnut salad post which is basically the same salad I have just been adding chicken for additional protein!  I love this combo so much that I had the idea to create the recipe for my strawberry balsamic grilled chicken!  If you are looking for the perfect Memorial Day dish or are just interested in new healthy dinner options, this recipe is for you!

Like most people, I have fallen into a chicken rut where I find myself cooking the same recipes over and over until we are completely chickened out.  This recipe is just the thing to bring your love of chicken back to life!  It's sweet from the berries, tangy from the vinegar, and together mixed with the smokiness from the grill this chicken is so delicious!

Chili Lime Grilled Salmon with Fresh Corn Salad

I have already confessed to you my love of corn and how I could eat it everyday.  You could say I am on a corn kick right now, kinda like my blueberry kick that I just got off of.  There is so much of it at the farmer's market and it's fresh and sweet and so great for any meal, any night of the week.  Throw a piece of salmon on the grill, and we have ourselves a healthy meal that is ready in a jiff!

Most of the time I like to eat corn off of the cob because, I dunno maybe I like getting it stuck in my teeth?  No, that can't be it...whatever the reason, I am not sure I even know, I like it.  However, I found myself with 18 ears of corn (they are five bucks for a dozen, how could I resist) in my fridge and figured I should try something different with it.  This is how my corn salad came to be. 

This meal is perfect for getting you back on track after that holiday weekend that we all just came off of with too much barbeque and not enough veggies.  It would be great for lunch or dinner and it's quick and easy for those weeknights when feel like you don't have the energy to cook something that's good for you.

Mexican Inspired Grilled Corn on the Cob

It's summer which means that corn is in season, which makes me a very happy girl.  Corn on the cob is one of my favorites and I could eat it everyday honestly.  I like it boiled, grilled, roasted, sautéed...I don't discriminate.  I can get it fresh at the farmer's market right now and it's so sweet and tender (I could eat it right now, for breakfast.)  And since I buy a dozen each week, I wanted to turn the flavor up a notch so that I can get away with serving it several times a week!  Hello Mexican inspired grilled corn on the cob, get in my belly.

Get ready for your life to be changed.  I mean seriously this corn is amazing.  It's full of flavor, it's healthy, and it's quick and easy to prepare!  The presentation is pretty enough for entertaining, but easy enough for any ole night of the week to serve your family!

The flavors are so fresh and just scream summertime.  It's the perfect side for BBQ, burgers, fish, or chicken...or you can eat leftovers for breakfast...I won't judge.

Charred Spicy BBQ Grilled Chicken with Parmesan Thyme Potato Wedges

It's summer, maybe not officially, but the heat tells me that summer is here.  At least in Louisiana, which means one thing.  Lots of grilling to be had!  And you are going to want to make my charred spicy BBQ grilled chicken with parmesan thyme potato wedges all summer long!

Sometimes I have no idea why we grill in the summer more because it is hot as balls (excuse my French), but seriously it's 4,000 degrees outside and we decide it's a great idea to go and stand by a lit fire and grill some stuff...brilliant.  But it just tastes so good that we have to!  It just goes with summer, sweat and all, you just have to grab a cold beer, and get to grilling. 

Canean and I love BBQ almost as much as we love each other, and making BBQ at home is one of my favorite summer spreads.  The key to good BBQ chicken is to slow cook it and add a little char at the end in my opinion.  There is nothing better than crispy skin smothered in your favorite sauce..yum!

This sauce is an old faithful that I go to out of my Southern Living cookbook.  It's so good that I have never tampered with it too much, just a few minor adjustments.  It's sweet and spicy and dark in color and is just delicious!  The potatoes are the perfect side and you might even want to dip them into the BBQ sauce..get crazy with it!  This is your BBQ after all.

Grilled Buffalo Chicken Wings and Wedge Salads

I crave wings like most grown men crave wings and I like to blame that on my husband because I didn't really find a true love for the food until we were together.  Wings happen to be one of his favorite go to "splurge" meals and I usually join in on the festivities.  You aren't surprised are you?   And because I love them so much I decided that I needed to make them at home and that way I could make them a little healthier.  So I started making grilled buffalo chicken wings and wedge salads for a side. 

I have told you before, but just in case you didn't know,  we have an awesome farmer's market where I live and one of the chicken farmers sells skinless wings!  They are so delicious and with the skin gone it cuts down on fat immediately.  I get them almost every week because I love them so much.  If you can't find skinless, don't worry you are still going to healthier with this recipe!   Instead of frying the wings, I grill them and then instead of French fries or some other unhealthy side we usually end up getting, I make a salad inspired by the blue cheese dressing and celery served with traditional wings.

It's the perfect light summer meal and it satisfies that wing craving that I get so much and I don't have to feel bad about it at all.  If you are a little skeptic, it's ok just give them a try and see for yourself!
