There is a taco phenomenon going on right now and I have to say I am not hating it! I love all kinds of tacos...who doesn't right? We have breakfast tacos once a week in our house and sometimes will have another taco recipe for dinner all in the same week! My hubby would eat tacos all day, everyday if I would make them for him, and our toddler is just as crazy about eating them too! (Like father, like son!) I love making my favorite foods like tacos at home because I can control the ingredients and make them a bit healthier, which means we get to eat them more! One of my favorite easy and healthy weeknight meals that I make on a regular basis happens to be my easy fish tacos!
If I've said it once, I've said it 100 times, weeknight meals have to be quick and easy at my house! No one has time for a dinner that takes more than thirty minutes on any given weeknight with everything else going on throughout the day! I love a meal that even when I am exhausted doesn't take too much effort and tastes delicious too! Fried rice has always been one of my favorite meals to whip up on a busy day, and until now I have never really been a fan of cauliflower rice! BUT my Easy Pork Fried Cauliflower Rice changed my mind and I have a feeling if you have been hesitant to get on the cauliflower bandwagon, it will change your mind too!
I am not good about meal planning over the weekend. I think it's because that part of my brain turns off when Friday rolls around. So Monday for me is when I plan out my week and figure out all of our meals. One thing is for sure when I am planning, and that is all of the meals have to be EASY and relatively fast too! After a weekend where I indulged in a few too many tacos, because Cinco de Mayo and all, I am definitely craving some lighter dinners this week. We tend to have salmon almost every week and I am always looking for new flavor combinations to switch things up so we don't get tired of eating it. Raise your hand if you cook chicken at least once a week? (Me!) I am raising my own hand because we have chicken on the regular at our house. I love buying whole chickens because you get more for your money and then you end up with white and dark meat, which in my house is a good thing because everyone wants something different! This always usually means leftovers are an option and I can turn them into a whole other meal! Talk about cost effective! The problem with chicken is that I can get burnt out on it and I'm sure you do too! April has been an odd month for me, not in a bad way, just really busy! I was out of town, my mom came in town, and now tomorrow I go back out of town again! And now tomorrow, I am headed to Los Angeles for my first ever blogging conference and I couldn't be more excited! I cannot wait to connect with my fellow peers and I know I am going to learn so much! If you saw my Instagram, then you already know my office space got a revamp, so I am super pumped about going to this conference and coming back super inspired and ready to work! And the reason I am telling you all about my travels this week is because when schedules get busy, dinner needs to be simple and if it can be healthy to, even better! My simple pork and spinach miso ramen is to the rescue!
