Living a nutritious conscious lifestyle is something that I strive to achieve with my family, which starts with what I am putting in my body and what I am feeding my family.  I am always looking for ways that I can make my favorite recipes lighter by swapping out simple ingredients that make a big difference in the long run. A recent study has found that adding Mazola® Corn Oil to one’s diet resulted in lower cholesterol levels than coconut oil.  A previous study found that corn oil can also help lower cholesterol more than extra virgin olive oil.

30 Minute Gluten Free Cilantro Pesto Chicken Pasta

Monday whipped my booty y'all.  I am not going to lie, it was a little rough.  I didn't sit down until well after 7:00pm (but for real) and then when I attempted to take a bath, my toddler hijacked it.  Like straight up, "mommy Parks take bath too."  And I mean of course I couldn't tell him no, so I took a cold bath and he swam in a sea of bubbles and was the happiest kid on the block.  Which, in turn made me the happiest mama on the block too, but man I had been looking forward to that bath.  When I put him to bed, I yawned really big and he said "Mommy sleepy"...yes buddy mama was super sleepy last night.  I totally get it now why my mom would fall asleep as soon as she would sit down my whole life!  This mom stuff is no joke!  So while we are on the topic of days where you literally don't have energy to think about dinner, let me help you out!  My 30 minute gluten free cilantro pesto chicken pasta is a cinch to make on any day of the week, (even the exhausting ones.)

30-Minute Shrimp Curry

Currently I am about to watch This is Us and I know I have to get this post written before hand because if I try to watch it while I write this post, my computer keyboard will be covered in tears.  Can anyone else relate?  What is it about that show?  One minute you are laughing, the next...a puddle full of tears.  I love it though, I am not going to lie.  But the real reason you are here is not to hear me go on about how emotional I get while watching a TV show, but it's because you are looking for a quick, easy, and healthy dinner to feed your family this week am I right?  Okay, okay...I hear you and I've got the perfect dinner for any night of the week!  My 30-Minute Shrimp Curry is one of my go-to weekly dinners, is full of flavor, and couldn't be any easier to prepare!
