So yesterday Parks started preschool y'all...I mean it's only two days a week, but it was still a huge day for him (and me) if I am being honest! I was full of mixed emotions as I dropped him off for his first day and you know what, he did great! The day ended up flying by for me and it was one of those days where dinner needed to be simple and fast! My easy chicken and veggie sheet pan dinner came to the rescue and is a regular around our house for just that reason!
Currently I am about to watch This is Us and I know I have to get this post written before hand because if I try to watch it while I write this post, my computer keyboard will be covered in tears. Can anyone else relate? What is it about that show? One minute you are laughing, the next...a puddle full of tears. I love it though, I am not going to lie. But the real reason you are here is not to hear me go on about how emotional I get while watching a TV show, but it's because you are looking for a quick, easy, and healthy dinner to feed your family this week am I right? Happy Monday guys! My mom has been in town for the past week and leaves today which is always so bittersweet for me! Even though I hate to see her go, before that I was out of town for a few days so needless to say my schedule and diet have been all over the place! I am looking forward to getting back into a routine this week and getting back on track with our meals! One of my favorite ways to do this is by having nourish bowls for dinner or lunch! Being a mom sometimes means being super woman it seems. There just aren't enough hours in the day to do everything we are "supposed" to be doing. Between keeping up with a toddler whose mood changes from one second to the next, running errands, getting my work done, and trying to find a moment that I can have to myself, I'd be lying if I said dinner didn't sneak up on me from time to time! This just adds to the crazy that is motherhood which is why I make my life a little easier and keep Red Baron pizzas in the freezer for hectic days where I need an easy dinner! I like to whip up the ultimate Italian sub salad to pair along with a couple of pizzas for a quick and tasty meal the whole family will devour!
