Oh man, the weather here over the weekend was absolute perfection. Windows were open, there was a crispness in the air, and I actually could feel fall. We had Parks' 1st birthday party and celebrated with friends and family and it couldn't have been a more perfect day. His birthday will always signify the start of fall since it's on October 1st, and to me it doesn't seem like fall until October. One of my favorite ways to get into any season is to start cooking with my favorite seasonal flavors. My roasted beet and acorn squash Autumn salad is the perfect side dish or meatless dinner that will have your tastebuds in total fall bliss!
Dare I say that I can finally feel a hint of fall? The air is definitely changing here in Texas, even though it is still pretty hot compared to some other parts of the country, it's feels pretty great to me. I had the windows open all weekend and definitely felt the fall baking bug and soup cravings hitting me hard. Anyone else have this happening right now? Guess what came in the mail this week? A copy of MY cookbook, that's what! I am pinching myself y'all! I mean I knew it was coming out ya know, but to actually have a copy in hand makes it so real and super exciting! Needless to say, I couldn't go to sleep last night because my brain was too happy! I'm feeling like I need extra coffee today and am thankful for easy dinners like my one pan roasted chicken sausage and veggies for days like today!
Easy recipes have been saving my life lately. Parks is officially on the move and getting into everything! I almost always eat my breakfast and lunch standing up in between chasing him around the house and needless to say, this mama is whooped by the end of the day. Pouring a glass of wine is sometimes all the energy I have left in me...truth. I make salmon once a week because, number one it is so good for you, and number two it can be ready in 12 minutes! That's why my recipe for easy salmon on the stove is perfect for any night of the week and especially for tired mamas.
Can someone please explain to me how it is almost July and how I am going to have a 9 month old baby? Where has the time gone? This year is flying by entirely too fast for me and I need it to slow down. We've had a lot going on the past month with Parks having surgery among other things and one thing that has been a lifesaver for me is easy dinners! I have been making lots of 30 minute meals lately because I just don't have time for much else! I am sure you can relate with kids home from school, vacations, and all of the other busyness that comes with summer. The days are disappearing and dinner time rolls around without any warning leaving your hungry family staring at you wondering what will be on the menu for the night. My Greek chicken pasta salad is going to be one of your new favorite easy meals that will fill up your "people" while keeping it somewhat healthy at the same time!
I've been back in the kitchen this week cooking for My Diary of Us (finally) and dang, it feels good. With so much going on in my life right now, both work and personal, I have been neglecting this space that I have always loved coming to. I'm jumping back in with baby steps and just kinda feeling my way back into the groove of it all.
