Toddlers in the Kitchen and the Importance of Hand Washing

My happy place is in the kitchen cooking up something delicious and nutritious for my family.  And now that Parks is getting older, he is also expressing a lot of interest in helping me in the kitchen!  I have every hope that he will fall in love with cooking just like his mama, but even more than that I hope I can teach him about where his food is coming from and what it takes to prepare it.  I think it's important for kids to learn how to prepare food for themselves and that comes from spending time in the kitchen!  One thing that we have really been working on is washing our hands before and after we make anything so that our hands stay clean.  With constant hand washing however, toddler hands (and mama hands) can become dry!  That's why I am loving Dial Complete® 2 in 1 Moisturizing & Antibacterial Foaming Hand Wash for me and for my son to keep our hands sanitized and moisturized at the same time!

After releasing my second cookbook, First Bites, in August 2017 I realized a little something about myself.  The first thing was that I'm really good at my job, the second was I really love my job, the last thing I realized was that I'm timid and shy and afraid of rejection so I don't put myself out there like I should.  It took my second book releasing for me to decide that it's time to step out of my comfort zone and take some risks in big ways for 2018.  No more hiding in my kitchen and behind the camera, slowly allowing self doubt to creep in...it's time for me to go after what I want with zero fear of failure!  In 2018, I'm all about saying "Yes" to what to come!

Being a mom sometimes means being super woman it seems.  There just aren't enough hours in the day to do everything we are "supposed" to be doing.  Between keeping up with a toddler whose mood changes from one second to the next, running errands, getting my work done, and trying to find a moment that I can have to myself, I'd be lying if I said dinner didn't sneak up on me from time to time!  This just adds to the crazy that is motherhood which is why I make my life a little easier and keep Red Baron pizzas in the freezer for hectic days where I need an easy dinner!  I like to whip up the ultimate Italian sub salad to pair along with a couple of pizzas for a quick and tasty meal the whole family will devour!

Parks is 1!

They always say don't blink because it all passes so quickly, and at the time when you are tired from sleepless nights, you are covered in spit up, and can't quite remember what your old body felt like...it's hard to see how that could be true.  Well I blinked and here we are one year after our lives changed forever, and Canean Parks Chatagnier was born.  Just like that, truly in a blink of an eye, a whole 365 days have passed.  Our baby boy who struggled while taking his first breaths and came into our lives rather traumatically, is vibrant and so full of joy that he brightens our days more than he will ever know.

Five Months Later...

I feel like I almost forgot how this whole blogging thing goes.  The past five months have been a whirlwind and I feel like I am finally getting back to a little normalcy around here.  Between having a baby, completing my first cookbook, and trying to be a somewhat good wife, I haven't had much time to just be, let alone blog.  I have missed this (and you) so much and cannot wait to share with you some new recipes that I am excited about right now!  For now though here's a little recap of what I've been doing for the past five months!

Friday Pregnancy Confessions: The Final Countdown

It seems like just yesterday that I took that pregnancy test, knowing it would come back positive this time.  I waited for Canean to leave for work and then immediately took the test. That day was one of the longest days of my life waiting for him to come home that afternoon.  We had been trying for a while with no luck, so I wanted it to be a surprise.  He came home rattling on about something with a house in Texas that we were thinking about buying at the time and I thought he would never let me get a word in!  Finally I interrupted and told him I had a surprise.  I made him close his eyes, and gave him a piece of paper on it where I told him in a not so obvious way that he would be dad.  We both cried, were in shock, and felt incredibly grateful that God would give us this gift.  Fast forward to 9 months later and we are two weeks and two days from baby boy's due date and it all seems so surreal to me.
