Spicy Garlic Sesame Chicken

Healthy Autumn Nourish Bowls

Happy Monday guys!  My mom has been in town for the past week and leaves today which is always so bittersweet for me!  Even though I hate to see her go, before that I was out of town for a few days so needless to say my schedule and diet have been all over the place!  I am looking forward to getting back into a routine this week and getting back on track with our meals!  One of my favorite ways to do this is by having nourish bowls for dinner or lunch!  I love knowing that every bowl is packed with nutrition that will give me energy, keep me full, and satisfied!  My healthy autumn nourish bowls are just the kind of meal that I need to get my body back on track!

Spicy Roasted Tomato Basil Soup

The weather has turned here in Texas, and I am hoping it's here to stay!  The nights have been chilly, the days crisp, and I've been in the mood for all the soups.  I am one of those people who could eat soup on a hot summer day, but I don't make them as much because Canean is definitely not one of those people.  This gets me really excited for fall and winter when I can make as many soups as I want!  My spicy roasted tomato basil soup is one of those soups that will become one of your favorites that gets put on dinner rotation.  It's simple, healthy, and so full of flavor that you and your family are going to love it!

Apricot, Arugula, and Quinoa Salad with a Cumin Vinaigrette

It's still raining.  Yeah, we are on week two of dreary weather and this gal is overrr it.  The backyard is muddy, I have to force myself to be productive, and the only thing that sounds good is a nap and foods that I shouldn't be eating.  So in an effort to brighten up this Tuesday I made a colorful and healthy salad that will hopefully turn my rainy day blues around and will keep me full of energy all week long! My apricot, arugula, and quinoa salad with a cumin vinaigrette is just the salad to do the trick!  It's gorgeous, full of flavor, and so good for you too!

Quinoa has been around for a while now, and if you aren't using it yet, today is the day to start.  It's packed with protein, minerals, and vitamins and is definitely a grain that should be added into your diet!  Perfect as a side, or mixed into a salad, I love it just about any way I can get it!
