Healthy Eating Meal Plan Week 3

We are three weeks into January and the healthy meal planning is still going strong! I have absolutely loved seeing the recipes you all have been making and how much you have been enjoying these meal plans! We are going to close out the month strong with some more of my favorite recipes to get you through the end of the month! Because you all loved the make it once, eat it twice or three times approach last week, I am including several recipes for breakfast lunch that you can do just that! I aim to make your life easier in the kitchen and I hope this meal plan does just that!

Hey hey Monday! I see you, trying to intimidate us all, making us wish it was still the weekend..but that’s not going to work this week! I’m ready for you. I woke up motivated, rested, and ready to tackle this week’s to-do list! How about you? Not so much? Don’t worry if you aren’t feeling quite as enthusiastic about Monday morning just yet, I am here to change your outlook! One of the ways I prepare for a successful week is by meal planning and lunches are the one thing that sometimes get the short end of the stick! I have had several requests for not only kid friendly lunches, but also adult lunches, and I have a great one that you can prep in advance for the week! Healthy Curried Chickpea Salad

My weekly routine has been out of whack the past couple of weeks.  My gym days have been off, my diet has been decent but not great, and the reality is...that's just life sometimes.  This week is the first week in a while that I feel like will be back to normal "ish" again and one thing that is going to help me stay on track is meal prepping my lunches!  This means that I won't find myself eating junk and I will have a nutritious meal ready to go whenever I get hungry!  My healthy curried chickpea salad is just the kind of recipe that is perfect to meal prep at the beginning of the week!
