Veggie Loaded Egg and Bacon Breakfast Paninis

Breakfast is the most important meal of the day and yet more times than not we end up neglecting it because of busy mornings, which leads to grabbing a less than filling and healthy option on the way out the door. Thats why I have started meal prepping breakfast options on Sundays to ensure that we start our day the right way all week long. Breakfast paninis are great for meal prepping because you can add whatever ingredients you have on hand and they store in the freezer or the refrigerator perfectly. Not only are these paninis great for meal prepping, but they are also great for weekend breakfasts while entertaining family and friends, especially with the holidays right around the corner because you can batch cook them. (Hello, easy recipe!) Spicy Kimchi Avocado Toast

Bye Bye January and hello February! Anyone else feel the same way? I always feel like January is a slow motion month where I can’t seem to find my rhythm after the holidays. It’s basically there so we can adjust to normal life again and then in February we get to really start our new year. Or maybe I’m alone in this and I need to get my act together sooner next year…either way I am welcoming February with open arms! I am finally over my shingles (yeah I had shingles last week if you missed it) and I feel like I am all about eating things that makes me feel good and that nourish my body as I am healing! I have been loving adding this Spicy Kimchi Avocado Toast into my morning or afternoon because it’s not only delicious, but packed with serious nutrition too!

Golden Milk Overnight Steel Cut Oats

For the first two weeks of January I was having a hard time getting out of holiday mode and back on track with regular everyday life. I talked to so many people who felt the same way this year and finally this week I started feeling like myself again in all aspects of my regular routine. I got back to eating real food, moving my body daily, and most importantly I got my work mojo back! One of the ways I like to stay on track is by starting my day off with a healthy and filling breakfast that gives me energy to power through the day! Oatmeal is a great way to start you day and you can add just about anything you want into a bowl and make it work! My golden milk overnight steel cut oats are a great way to ensure you have a nutritious breakfast any day of the week!

Easy Loaded Açaí Bowls

My hubby is addicted it açaí bowls.  Every Friday he takes our son to a local cafe and they share one together!  Although I have been putting açaí packets in my smoothies for a while now, until we went to Hawaii I had never actually had an açaí bowl!  (I loved it obviously!)  They were so fresh and delicious, the perfect way to start our day!  I knew I wanted to start making them at home because they are much more cost effective this way, and now we can have them whenever we want!  I created a recipe for easy loaded açaí bowls that anyone can do right in their own kitchen!

Whole Wheat Strawberry Bread

I told myself I wouldn't bombard you with strawberry recipes after I made about a bajillion things with all of those fresh strawberries we picked two weekends ago, but....this strawberry bread is kind of epic and needed to be shared with you sooner than later.  And I know a few of you who follow me on Instagram have actually been patiently waiting for this bread to hit your inbox!  In two weeks, I have made two loaves of this bread and have eaten a piece almost every afternoon since then!  My whole wheat strawberry bread is going to be your new favorite easy breakfast or afternoon snack guaranteed and I can't wait for you to try it!
