Spicy Kimchi Avocado Toast

Bye Bye January and hello February! Anyone else feel the same way? I always feel like January is a slow motion month where I can’t seem to find my rhythm after the holidays. It’s basically there so we can adjust to normal life again and then in February we get to really start our new year. Or maybe I’m alone in this and I need to get my act together sooner next year…either way I am welcoming February with open arms! I am finally over my shingles (yeah I had shingles last week if you missed it) and I feel like I am all about eating things that makes me feel good and that nourish my body as I am healing! I have been loving adding this Spicy Kimchi Avocado Toast into my morning or afternoon because it’s not only delicious, but packed with serious nutrition too!

Have you eaten kimchi before? Are you a fan? It’s fermented vegetables and contains probiotics that are great for gut health, plus it’s really tasty too! If you haven’t ever tried it, but have been curious, this toast would be a great place to start!

Everybody loves avocado toast right? And this kimchi avocado toast takes it to a whole new level, let me tell you! There is so much flavor packed onto one piece of toast and honestly its so satisfying! This toast is such a great way to start any day and happens to be hearty enough for lunch too! I like mine a little spicy by drizzling some spicy sesame oil over top, but you can skip that part if you aren’t a fan of spicy food! Either way I can promise you that it’s absolutely delish!

My favorite way to top this toast is with a perfectly fried egg, but you can also top it with scrambled eggs or even skip the eggs all together if you wish! Make this toast your own and add a little variety into your avocado toast game!

YUM!

Ingredients:

  • 2 Slices Bread of Choice

  • 1/2 Avocado, divided in half

  • 1/4 Cup Kimchi, Sliced Thin

  • 2 Fried Eggs

  • Salt and Pepper to Taste

  • 1 Tsp. Spicy Sesame Oil (optional but delicious)

  • Finely Chopped Cilantro and Green Onions for Topping

Directions:

  • Toast bread until desired consistency. (I like a pretty well toasted bread here so that it holds up to the toppings.)

  • Spread avocado onto two pieces of toast and season with salt and pepper.

  • Add a layer of kimchi on top of the avocado.

  • Top with a fried egg. (Or eggs of choice.)

  • Drizzle sesame oil over top.

  • Sprinkle the top with green onions and cilantro.

  • Serve immediately.

This toast is going to change your breakfast routine for the better! You can even boil your eggs ahead of time to make it even easier to get this toast in your belly!
