When I was pregnant I ate at least three tomatoes a day with garlic salt and had to make myself stop so I wouldn't get a mouth ulcer! Summer is almost here guys which means my favorite time of year for all things food is right around the corner! t's raining cats and dogs here in Texas and the sun isn't supposed to show it's face to us again until Friday...bummer dude. I am not one of those people who likes rain for more than about a day because I crave sunshine like I crave chocolate. I need it for energy, a good mood booster, and I tend to eat healthier when the sun is shining. When it rains, I want comfort food and to stay in my pajamas all day, if I'm being honest. This week started out a little rough, I am not going to lie. Parks had his first tumble and hit his little nose on the coffee table pretty good leaving a little bruise and scrape and basically scared me to death. He was fine after he calmed down, and I on the other hand was shaken for the rest of the afternoon and was sure we needed to go to the doctor. It was a long day , and on days like Monday (or any day really), easy dinners are necessary and there isn't anything more simple than whipping up a fantastic salad. You guys, this whole trying to get things done thing with a newborn is way harder than I anticipated. I had big plans on being back fully into blogging mode and thought I would be back to whipping up recipes in the kitchen by now. I am back making simple dinners for us in the kitchen and am managing to get a little work done here and there, but am by no means back to my regular schedule just yet.
