Happy Friday and happy February friends! I am super excited that this weekend is Super Bowl weekend, mostly because of the food options that I get to plan out! I may be fighting a sore throat right now, but that doesn't meant that I don't plan on still enjoying my game day eats! Nachos are one of my favorite game day eats, but what I love even more is mixing the recipe up in new ways! Let me introduce you to the ultimate tater tot nachos ready to blow away the rest of the food at any Super Bowl get together!
Happy Monday! I hope you all had a great weekend! It was rainy all weekend here in Texas so we did a lot of cooking and hanging out, which is fine by me because there isn't a whole lot that you can do when the weather doesn't cooperate except make delicious food! And because we spent a lot of time indoors, I spent a little time planning out my Super Bowl menu for this coming weekend also! I want a good balance of healthy versus indulgent dishes and one dish that is 100% going to be making an appearance for the big game is my easy 5-ingredient buffalo cauliflower!

I happen to be the griller in my household. I rarely let my hubby do anything but light the grill for me, and I get very excited about grilling any chance I can get! Summertime obviously provides lots of grilling opportunities, and then when fall rolls around people tend to forget about it. I on the other hand embrace fall grilling because football is back on TV and what better way to watch the big game than to have a tailgate gate extravanganze at home (home-gating if you will)? What is tailgating without a little grill action, am I right? I love mixing up what I'm serving for gameday and my new favorite easy recipe to make is a grilled spicy black bean burger with charred poblanos and avocado crema!
