It is hard to believe that we are a few weeks away from Christmas and baking season is officially upon us! For me it’s the most magical time of the year and I hate that this season seems to already be passing so quickly. Anyone else want December to last just a little bit longer? Every holiday season, my baking bug returns almost instantly as the tree gets decorated and the house feels extra cozy. While I love baking the traditional recipes, I am all about finding recipes that are slightly better for me that I can bring to all of the holiday festivities that come about this time of year. Gingerbread is one of those quintessential holiday flavors that is my go-to whenever I decide to bake. It smells the house up with warming spices that just say merry Christmas. School is officially back in for most schools here in Texas and that means busier schedules for us too! It has been raining since Sunday and the sun finallllyyyyyy came out yesterday evening for the first day of summer! Summertime means it's officially ice cream season, even though I kind of feel like ice cream should be enjoyed all year long! Who's with me? Speaking of ice cream, when we were in Hawaii we ate at an amazing gelato spot (two nights in a row) and had a seriously delicious toasted coconut flavor that I haven't been able to get out of my head since we returned! Naturally, I had to recreate this flavor at home and the result was amazing! My chocolate coated toasted coconut ice cream might have just earned a spot as my most favorite ice cream I've ever made!
April has been an odd month for me, not in a bad way, just really busy! I was out of town, my mom came in town, and now tomorrow I go back out of town again! And now tomorrow, I am headed to Los Angeles for my first ever blogging conference and I couldn't be more excited! I cannot wait to connect with my fellow peers and I know I am going to learn so much! If you saw my Instagram, then you already know my office space got a revamp, so I am super pumped about going to this conference and coming back super inspired and ready to work! And the reason I am telling you all about my travels this week is because when schedules get busy, dinner needs to be simple and if it can be healthy to, even better! My simple pork and spinach miso ramen is to the rescue!
Anyone else feel like January has been the longest month ever? I can't even pin point what has made it so long, but it just seems like it should be over already! I am 100% ready for a new month and since it has taken me until the end of January to really get back into my healthy routine I guess you could say February is going to be my official start to the new year! I love having healthy food items like granola prepped and ready to go in my pantry because it makes for such a yummy breakfast or snack! My coconut and apricot granola is such a great combination of flavors and textures and is packed full of good stuff for your body to keep you fueled all day!
