Whole Wheat Pasta Salad with Peas, Radishes, and Parmesan

I am finally cooking in my kitchen again and I gotta tell you, I felt a little rusty for a few days.  I had to get my mojo back, including getting used to a new kitchen, remembering where I put everything, and figuring out the new cook times with this oven since it cooks completely differently than my last one.  This week I'm getting my stride back it seems and I am so glad to be settled and feeling somewhat normal again.  After spending two week eating out and surviving off of whatever Canean and I could find to eat (including fulfilling my pregnancy cravings), we decided this week we were both going to get back to our healthy lifestyles and that includes working out and eating right.  My whole wheat pasta with peas and radishes is the perfect light lunch or dinner side that is healthy and full of flavor.

Prepping for the week is the only way to ensure you will be successful to stay on track..at least for me it's that way.  And one of my most favorite tricks is to make a dish that I can eat on for a few days.  It's ready to eat, so it doesn't give me time to choose a not so healthy option instead. This pasta salad is the perfect recipe to make in advance because it can be eaten at room temperature or right out of the fridge.

Roasted Cornish Hens and Root Vegetables

I woke up this morning thinking it was Tuesday and to my surprise realized that it was Wednesday.  I love when that happens usually because it means the weekend is right around the corner, but in this case it just means that my days are passing too quickly these last two weeks here in Louisiana.  My days are packed full with lists, my work, and seeing as many friends as possible.  With full days like these I have been loving easy dinners that allow me to multi-task!  My roasted Cornish hens and root vegetables is the perfect meal to fix on those busy weeknights where you just don't have the time to babysit the stove!

You may or may not have cooked a Cornish hen before, but if you haven't I'm telling you they are just as easy as a regular chicken and are super tender and delicious!  Cornish hens are a certain breed of chicken and I love them because everyone gets their own bird where you get your white and dark meat all in one!  And even if you aren't usually a dark meat kind of person, the dark meat yes has more fat, but it also holds some serious nutrients that are especially good for women!

Citrus Detox Water

It's almost Friday!  We have officially almost made it through the first full week back to normal life after the holidays.  And I have officially almost made it through one full week of detoxing my body and trying to recoup some of the damage that I did over the month of December.  I am sharing with you one of my most favorite ways to flush the bad stuff from your body when it needs it most!  Citrus detox water will have your body feeling refreshed and more than likely a little bit lighter in no time!

I happen to love just regular ole water and drink a ton of it on a regular basis, but when I need to kick it up a notch, I add some power ingredients to assist in flushing my body.  This usually happens after the holidays or after a very indulgent weekend.

Pepper Jelly Roasted Carrots

Okay people, Christmas is a week and a day away so we have to get serious about what's going to be on the table for Christmas dinner.  I am torn between a traditional Christmas dinner or full fledged Italian.  Decisions, decisions.  If I go the traditional route, which for me means a standing rib roast with a bunch of veggies served on the side, these pepper jelly roasted carrots will be making an appearance no doubt about it.

Canean loves carrots, like they are probably one of his favorite vegetables, raw or cooked.  Maybe he's part rabbit.  For some reason when I was growing up I didn't eat too many cooked carrots, I guess because my mom isn't that crazy about them.  I started making them myself more in a,  they go with a roast in a crock pot kind of way, and then got smart and started roasting them in the oven.

Sausage, Sweet Potato, and Sage Frittata

Hi, it's me...Leigh Ann, the girl who disappeared on ya for a couple of weeks.  I know I am horrible and you have probably been starving because I have not been posting my recipes regularly...or maybe you actually can survive with me, but I don't like to think about that.  So let's pretend your life hasn't been the same without my usual posts to keep you company.  K?   I am here to feed you today, and the recipe is really good, so maybe you can forgive me, just this once.  I have the perfect brunch for your Thanksgiving weekend to make you a rock star in the eyes of all of your houseguests.  My sausage, sweet potato, and sage frittata is super easy, you will have most of the ingredients already, and it will knock everyone's socks off in the taste department.

We all know that when Thanksgiving rolls around you buy too much of everything just in case something goes wrong.  If we are lucky, nothing goes wrong but then we have a bunch of leftover herbs and other ingredients and then what?

Butternut Squash, Kale, and Wild Rice Salad

Happy Monday guys!  How was your Halloween weekend?  Did you eat too much candy?   We actually didn't get to eat that much candy because we ran out of the goods Halloween night, which was a good thing, but I may or may not have eaten too many of those pumpkin bars that I posted on Friday.  I can't resist them at all, and if you missed the recipe then you need to make them!  Since it's a new week and a new month,  I will be de-sugarfying my body starting with this healthy and really delicious butternut squash, kale, and wild rice salad! 

When we were in Florida two weeks ago, my friend Meg made us a wild rice salad with a ton of veggies and grilled chicken.  It was so good y'all and I loved the idea of tossing whatever veggies you have in the fridge with some rice and making a meal out of it!
