Veggie Loaded Egg and Bacon Breakfast Paninis

Breakfast is the most important meal of the day and yet more times than not we end up neglecting it because of busy mornings, which leads to grabbing a less than filling and healthy option on the way out the door. Thats why I have started meal prepping breakfast options on Sundays to ensure that we start our day the right way all week long. Breakfast paninis are great for meal prepping because you can add whatever ingredients you have on hand and they store in the freezer or the refrigerator perfectly. Not only are these paninis great for meal prepping, but they are also great for weekend breakfasts while entertaining family and friends, especially with the holidays right around the corner because you can batch cook them. Healthy Spiced Pumpkin Bread

The official first day of fall is almost here and I am ready for all the fall recipes to go down in my kitchen. Pumpkin bread always seems like a good place to start when it comes to fall baking and I realized that I had never shared my go-to recipe that is healthy and delicious. (That obviously has to change right?) Pumpkin bread is one of those things that I look forward to every year and there is nothing better than the smell of warm spices baking in your oven! Aside from the perks of having your house smell like your favorite fall candle, but way better, I also like making my own pumpkin bread at home because I get to make a healthier version of my favorite fall bread. Veggie Loaded Everything Bagel Pasta Salad

After being out of town for a week, I spent the day yesterday meal prepping to help prepare for a week of getting back on track with work, school, and our regular routine! One of the first items up that I prepped was an easy pasta salad. Pasta salads are on of those dishes that I love making ahead of time because they make easy lunches and/or a simple addition to dinner! Another perk is that they just get better in the fridge after sitting for a day or two. I love that I can add a tons of veggies into the mix to bulk up the pasta along with whatever protein I want to add in whether that be beans, chicken, or cured meats! I am currently obsessed with my new favorite pasta salad which just so happens to use one of my go-to seasonings, everything bagel seasoning. My Everything Bagel Pasta Salad is not only easy to make, but your whole family is going to love eating it all week long!

Banh Mi Meatball Sandwiches

I love Vietnamese food. Lately I can’t stop making dishes with an Asian flare and meatballs happen to be the perfect vessel to infuse with those delicious flavors! One of our favorite Vietnamese dishes is a Bahn Mi Sandwich. It can be made with several different proteins, but I happen to love a pork Bahn Mi the best, especially when topped with quick pickled veggies, spicy jalapeño, and cilantro! It’s a sandwich loaded with flavor and my family can’t get enough of it! I have even made Bahn Mi Tacos in my slow cooker that are so perfect for any weeknight dinner! My new favorite twist on the traditional sandwich, is my Bahn Mi Meatball Sandwich that is perfect for meal prepping and dinners that the whole family will love!

Healthier Chocolate Zucchini Donuts

My kiddo happens to be a donut lover. It’s the one thing he can’t resist and asks for whenever we are out and about and they are available. Of course the occasional donut indulgence is fine, but when you can make your own at home and the ingredients are all good ones, you don’t have to feel bad about serving them up to your kids any day of the week! With the end of summer approaching at a rapid pace, I find that everyone I know has a ton of zucchini in their fridge and I know I am always looking for recipes to use up my zucchini in new ways! My healthier chocolate zucchini donuts are perfect for a healthy and fun breakfast and they happen to be loaded with all the good stuff!
