Savory Ham and Cheese Breakfast Bake for Two

If I have been a little quiet on here lately, I apologize. The past two weeks have been filled with travel and a bit crazier than usual schedule! In the middle of all of that, I also got food poisoning and cannot remember a time that I have felt that sick! But today I am back and ready to conquer a new week! I have been finding myself in a breakfast rut and have been experimenting with new breakfast ideas to try and pull myself out of eating the same old thing every morning, especially on the weekends! The other day I found myself with a somewhat stale load of french bread and the happiest accident happened! I created the most delicious savory ham and cheese breakfast bake that you are going to flip over and your whole family is going to love it!

New England Style Haddock Sandwiches

Two years ago my hubby and I went to Maine and fell in love with haddock sandwiches. They were everything you could want in a fish sandwich and more. These haddock sandwiches were made with simple ingredients letting the fish shine through. They were not greasy at all and yet had a perfectly crisp crust on the outside. The bun was golden, dressed simply with tangy tartar sauce and crisp lettuce and pickles. Is your mouth watering yet? (Because mine is, and it’s only 7 am here.) Needless to say we had a haddock fish sandwich almost every single day on our vacation, even if it meant splitting one because we just couldn’t get enough! Lucky for you, I created an at home version of our favorite New England Style Haddock Sandwich that rivals the original sandwich that I fell in love with!

Spanish Chorizo Summer Breakfast Salad

I love the idea of starting my day off with greens. I feel like it sets the tone for the day and makes me feel really good after I eat them. Peanut Butter Trail Mix Breakfast Cookies

Currently we are in a phase of my son waking up and walking out of his room and immediately requesting a “snack”. He doesn’t want to eat a real breakfast just a snack that he can eat and play at the same time of course. Since we don’t do “snacks” before meals, I had to get creative with what his options could be! Homemade S'mores Ice Cream

One of my favorite things to make in the summertime is ice cream. There are endless possibilities for flavors and I have created a simple recipe that anyone can do right at home with their own ice cream maker. S’mores are one of those nostalgic desserts that bring me back to summertime and my childhood after a long day of play. Isn’t it funny how food can bring up memories like that? It’s one of my favorite things about creating recipes. There is something so amazing about a gooey marshmallow sandwiched between melty chocolate and graham crackers that is just the best! I took that same delicious combo and created a homemade s’mores ice cream that should be the official ice cream of summer and I can’t wait for you to try it out!
