Peanut Butter Trail Mix Breakfast Cookies

Currently we are in a phase of my son waking up and walking out of his room and immediately requesting a “snack”. He doesn’t want to eat a real breakfast just a snack that he can eat and play at the same time of course. Since we don’t do “snacks” before meals, I had to get creative with what his options could be! I needed something that could be nutritious enough for breakfast, but that could also be available without me having to prep anything! (Enter the breakfast cookie!) Yep, that’s right, cookies for breakfast that are actually good for you to! My peanut butter trail mix breakfast cookies are going to be your family's new favorite breakfast cookie for on-the-go or for a quick breakfast at home!

These cookies aren’t just for kids either, they make a great take in the car breakfast for on the way to work or as a snack for an afternoon pick me up! You will love having them on hand for easy eating all week long! These cookies are great if you are the meal prepping type and will keep in an airtight container for up to a week! You can even store them in the freezer if you want to make a double batch and simply defrost them as you need them!

I made these cookies with peanut butter, but you can definitely swap it for a nut butter of your choice! You can even make them nut free by using sunbutter and using a trail mix that is seeds only! These cookies are definitely customizable based upon what you have in your pantry, so don’t be afraid to play around with the ingredients!

I have loved having these cookies on hand to hand to my son without even having to have my eyes fully opened yet, which buys me a little time to drink my coffee and wake up before having to cook something up in the kitchen! He loves that he is getting a “cookie” for breakfast, so it’s a win win situation for both of us! He gets to play and fill his belly and I can feel good knowing that these cookies are made with really good ingredients, including a whole serving of veggies!

You have to make these cookies this week, you will love them!

Ingredients:

  • 2 Cups Rolled Oats

  • 1/2 Cup Grated Carrot (can use zucchini instead)

  • 1 Cup Peanut Butter

  • 1/4 Cup Unsweetened AppleSauce

  • 1 Banana Mashed

  • 1/4 Tsp. Salt

  • 1 Tsp. Cinnamon

  • 1/4 Cup Maple Syrup or Honey

  • 1/2 Cup Favorite Nut and Fruit Trail Mix

  • 2 Tbsp. Hemp Seeds or Chia Seeds

Directions:

  • Preheat oven to 325 degrees.

  • Mix banana, applesauce, maple syrup, peanut butter, and carrots in a bowl and stir to combine.

  • Add in oats, salt, cinnamon, and hemp seeds and combine well.

  • Roughly chop trail mix and then fold into batter.

  • Using a cookie scoop or spoon, scoop out cookies onto a parchment lined baking sheet and press down on top to flatten. (Cookies will not spread in oven.)

  • Bake for 8-10 minutes until cookies are cooked through. Let cool.

  • Store in an airtight container for up to a week or in the refrigerator for up to two weeks.
