Raise your hand if you cook chicken at least once a week? (Me!) I am raising my own hand because we have chicken on the regular at our house. I love buying whole chickens because you get more for your money and then you end up with white and dark meat, which in my house is a good thing because everyone wants something different! This always usually means leftovers are an option and I can turn them into a whole other meal! Talk about cost effective! The problem with chicken is that I can get burnt out on it and I'm sure you do too! I'm sharing three different ways to roast a chicken that will keep you and your family from getting bored with chicken from week to week!
Summer is right around the corner and it's my favorite time of year for produce! Tomatoes in particular are at their peak and can most definitely shine on their own during this time. I love creating simple dishes when ingredients are so good that they just don't need that much more added to them! When BBQ season and outdoor entertaining are in full swing, I love bringing lighter and healthier dishes to the table to balance out the rest of the spread. My new favorite dish that I will be making all summer long is my garlic and dill tomato salad with cornbread croutons!
April has been an odd month for me, not in a bad way, just really busy! I was out of town, my mom came in town, and now tomorrow I go back out of town again! And now tomorrow, I am headed to Los Angeles for my first ever blogging conference and I couldn't be more excited! I cannot wait to connect with my fellow peers and I know I am going to learn so much! If you saw my Instagram, then you already know my office space got a revamp, so I am super pumped about going to this conference and coming back super inspired and ready to work! And the reason I am telling you all about my travels this week is because when schedules get busy, dinner needs to be simple and if it can be healthy to, even better! My simple pork and spinach miso ramen is to the rescue!
have always had a thing for chewy candy. Give me all of the Swedish Fish, Sour Patch Kids, and Gummy Bears that you have and I will be a happy camper! I don't however love the sugar content so I rarely eat any of my favorite candies, however road trips are always the exception! Parks inherited my sweet tooth unfortunately and the kid LOVES him some gummy snacks. While I try to only buy organic ones and only keep them in my bag for emergencies, like meltdowns in the doctors office etc, I still don't love giving them to him! That's why I decided to make my own gummies at home where I can add things like spinach to the recipe and not have to feel bad about giving Parks a little treat from time to time! My homemade spinach strawberry kombucha gummies are easy to make and full of real ingredients and no refined sugar so you AND your kids can enjoy a little "candy" and not feel bad about it!
You guys know by now that easy weeknight dinners are my jam. I love sharing them with you and they are a necessity in my life and probably yours too! My happy place is in the kitchen cooking up something delicious and nutritious for my family. And now that Parks is getting older, he is also expressing a lot of interest in helping me in the kitchen! I have every hope that he will fall in love with cooking just like his mama, but even more than that I hope I can teach him about where his food is coming from and what it takes to prepare it. I think it's important for kids to learn how to prepare food for themselves and that comes from spending time in the kitchen! One thing that we have really been working on is washing our hands before and after we make anything so that our hands stay clean.
