Let me start this off by saying that yesterday it was 65 degrees and sunny...felt completely like a Spring day...today it's supposed to snow and I'm totally confused by it all! This Texas winter has been the craziest yet! But anyhow, I hope we actually see some snow today because Parks will love it and I will love an excuse to make some hot cocoa and cozy up in my PJ's and not leave the house! The thing with snowy weather is that I always want comfort food, which usually comes in some form of a carb. However, I have really been trying to stay conscious of eating a little bit lighter on the carbs during the week so any kind of recipe that gives me that comfort satisfaction while keeping me on track is a winner in my book! My mini pizza frittatas are just the thing to satisfy my carby comfort food cravings without any guilt!

After releasing my second cookbook, First Bites, in August 2017 I realized a little something about myself. The first thing was that I'm really good at my job, the second was I really love my job, the last thing I realized was that I'm timid and shy and afraid of rejection so I don't put myself out there like I should. It took my second book releasing for me to decide that it's time to step out of my comfort zone and take some risks in big ways for 2018. No more hiding in my kitchen and behind the camera, slowly allowing self doubt to creep in...it's time for me to go after what I want with zero fear of failure! In 2018, I'm all about saying "Yes" to what to come!
Happy Friday friends! I am so excited for the weekend and the fact that it is going to be cold again for a few days! Houston never gets this much cold weather in the winter so I am loving being able to make all the cozy food and wear all of my sweaters that have been in boxes since we moved here! When the weather shifts there few things I love more than baking in the kitchen. There is something about a warm and delicious treat right out of the oven that is so comforting and perfect on a chilly day! Happy New Year Friends! We have literally been out of town for almost a full two weeks and I am slowly getting back into the swing of things. Not to mention that it is COLD here in Texas, which basically never happens, and I know what you northerners are thinking...it can't be that cold, but guys...the temp went down to 23 degrees last night! I don't care where you live, that is cold, especially to those of us who are used to mild winters! So while I am definitely hopping back on the healthy food wagon this week, I need some stick to your bones kinda food...because hello cold weather! I honestly cannot believe that we are a week away from Christmas already! This year went by so quickly guys, I literally cannot get over it. We are heading to my parents house this week and I am so ready for a little vacation and downtime with my family! My mom is one of those people who just makes Christmas so magical, which is why it has always been my favorite holiday. So many memories of family traditions including delicious meals are still so strong in my mind! I hope that I can make Christmas just as magical for Parks year after year so that he grows up with the same love for the holidays!
