We were on vacation last week and I have been trying to get back into the swing of things since Monday and because of the holiday thrown in, I feel like I haven't known what day it is all week! I do know that I am ready for Friday and it's officially one day away which means cocktails are in my near future. Parks has been on another level of crazy this week and this mama could use one or two delicious cocktails about now. My Rhubarb Basil Martini is summer in a glass and is the perfect weekend cocktail!
Happy almost 4th of July guys! We just got back from the beach yesterday and I am super excited that this week is a holiday week to help me ease back into the swing of things. I am trying to get my mind out of vacation mode and back into working mode after a week relaxation! Hellooooo summer! Although in Texas it feels like it's been here for a month or two now, it actually just arrived yesterday and I for one think it gives us all permission to drink more cocktails and eat more ice cream. Who's with me? I am all about some ice cream guys, whether it's hot outside or not...but you probably know this by now. However, I have really been trying to make an effort to ditch the sugar and cure my sweet tooth in other ways. I know that you have seen nice cream making it's mark in history by creating a smooth and creamy ice cream base out of frozen BANANAS, which is actually kinda bananas in itself, but also pretty genius. Nevertheless, it is delicious and a great way to satisfy that ice cream craving that comes full circle with the mention of summertime! With summer officially arriving less than a month away, I am gearing up for all things parties, cocktails, and a beach trip with my family at the end of June! I don't know about you, but when summer rolls around the last thing that I want to do is use my oven in any capacity. The air conditioner is already running 24/7 to keep the house at a reasonable temperature, and the last thing I want to do is add any heat to the mix! I am all about easy summer salads that I can grill up a protein to pair with it and call it done-so! My spicy peach and corn summer salad is my new obsession because it's spicy, sweet, and full of textures that you are going to love!
Okay so I just realized that all of my last recipes have been all about fruit. I guess that's because the heat index in Houston has been 104 degrees lately and fruit is my favorite snack of choice when it is hot outside! The fruit that is produced at this time of year is one of summer's greatest qualities if you ask me, and they just so happen to be all of my favorites! Right now I'm all about sweet cherries and have been eating them in my smoothies, plain-jane by themselves, and even in popsicles! My cherry and vanilla yogurt granola pops are healthy and delicious and, the best part, they are perfectly suitable for breakfast!
