Happy Monday guys! How was your Easter weekend? I hope it was filled with chocolate, friends, family, and maybe a little rest too! We had a great weekend spent playing outside in the sprinkler, hunting for eggs, and stuffing our bellies full of BBQ. I have however been battling a cold, and while it hasn't made me feel horrible, it has got me sneezing and my nose running like crazy. Whenever I feel my body starting to get sick or worn down I always try and rev up my smoothie intake because I can cram a ton of good ingredients into one drink! My citrus immune boosting smoothie is just the kind of drink that I will be sipping on all week long and I figured you might need it too
This week has already been a doozy and it's only Wednesday! Parks has all four, one-year molars cutting at the same time and poor baby has a low grade fever, stuffy nose, and is not his usual peppy self (aka he's cranky cranky). But who could blame him? Teeth cutting through your gums just sounds like an awful thing all babies have to go through...good thing we don't remember it! His appetite is down, which never happens, and we are both pretty exhausted from lack of good sleep and it's definitely weeks like these that I am so glad that I have a batch of my leftover cereal granola bars hanging out in the freezer for easy grab breakfasts or snacks for me and Parks!
As a mom there are two things I can't live without. Those things are healthy foods for my body to give me lots of energy throughout the day and delicious cocktails to keep me sane. I am always looking for easy ways to get as many nutrients in my body as I can without a whole lot of effort and of course I am always mixing up new cocktail concoctions on a weekly basis (because hello I have an 18 month old.) This week started out a little crazy because I had to finish all of my cookbook edits for Baby's First Bites (which will be released in the Fall in case you didn't know!) I mean, it's only Wednesday, but I am positive it should be Friday already. Do you ever have weeks like that? Well this week is one of those for me and easy is the name of the game for all things in the kitchen. I haven't had the time or the energy for anything but easy recipes and one of my favorites go-to's is the best house salad that you will ever make at home!
It's officially Spring, which has turned into my favorite time of year here in Texas. The weather is just right and there is only a small window of time before the heat takes over and I turn into a pool of water. We have been enjoying as much outside time as we can get while the temperature is perfect! Things like strawberry picking, letting Parks play in the sprinkler, and eating crawfish with friends makes for a pretty happy lady (aka me) let me tell you. Along with the desire to be outside more, comes a strong need for color on my plate! There is something about the weather shift that makes me crave fresh foods with lots and lots of color. My roasted beet salad with tahini white beans is one of those salads that is not only delicious and super healthy, but it is also really gorgeous too!
St. Patty's Day is tomorrow and while I would like to say we have some super exciting plans to celebrate, really I'd just be lying. We do have plans on seeing friends over the weekend, but I can guarantee you that it will all be extremely chill, which is right up my 33 year old alley if you know what I mean. But because I love any good reason to make a cocktail, I will be celebrating through my beverage of choice, which will most definitely contain alcohol. Enter the boozy green elixir, where healthy meets a cocktail and makes for the best of friends.
