Anyone else super excited for the weekend? I just didn't get my fill last weekend and have been feeling like this week has been never ending! It has been super rainy here in Texas which hasn't helped matters and I have been dreaming for a crisp Spring day! My sister in law is coming in town this weekend and I can't think of a better reason to whip up some yummy cocktails! The weather here in Texas has been very Spring like lately which has been fantastic because we have been soaking up the high seventy degree temperatures almost every day! I am a little fearful of what that means for our summer, but I'll take this window of perfect weather while I can. I am definitely ready to say goodbye to winter's heartier meals and say hello to Spring's fresh and light recipes that make me feel better as a whole! For me this means lots of fresh produce, lean proteins, and breaking out my grill more regularly! You probably are aware by now that I have been known to grill in rainy and cold weather, but there is something so much better about grilling on a sunny and warm evening or afternoon. My grilled chicken Greek salad is my new favorite that I have added into our weekly dinner rotation and you are going to love it too!
Hi...it's me...I've finally made my way back to you! I know you missed me right? (Well tell me you did even if you didn't.) So, since the last time I talked to you two really exciting things have happened! For one, I have officially written and submitted the first draft of cookbook number two and so now I will have some time again to get back to blogging! Well it happened, the weekend came and went in a flash just like it always does. Our weekend consisted of getting a new washing machine because last week the transmission in our old one went out, which come to find out repairing it would have been more than the new one we bought. Oh the joys of adulting right? On a positive note, I made some serious ground on the cookbook I am currently writing, Baby's First Eats! I still have a list a mile long every day until my deadline, but I'm are making some serious progress people. Since I am cooking all day everyday right now, easy dinners (that are healthy too) are a must! My healthy red Thai curry lentils are the perfect weeknight dinner for hectic weeks like the ones I have in my future!
Guys...I have been keeping a secret about a little (no wait big) project that I have been working on for a few months now! I am working on my SECOND cookbook that is to be released this fall! This time around it's all about the babies though, and I am so happy to tell you that I am releasing a cookbook, The Homemade Baby, this fall that will be stocked full of recipes for babies just starting on solids all the way through the toddler years!
