Anyone else super excited for the weekend? I just didn't get my fill last weekend and have been feeling like this week has been never ending! It has been super rainy here in Texas which hasn't helped matters and I have been dreaming for a crisp Spring day! My sister in law is coming in town this weekend and I can't think of a better reason to whip up some yummy cocktails! My peach jam and gin thyme fizz is the perfect weekend brunch cocktail to get your weekend started right!
If you don't know by now, I am a sucker for the bubbly. I love any good reason to pop open a bottle of champagne and this cocktail is so delicious! I love using jam in cocktails because it eliminates the need for a simple syrup and adds the best flavor! It's a great way to use a fruit that maybe isn't in season just yet too!
You could easily swap the peach jam for whatever your favorite is or whatever you have in the fridge, because I could totally see blackberry or even strawberry jam being fantastic with the thyme and the gin! But there is something I just love about the peach here, especially with the fresh thyme! I always love a herbs in my cocktails because they give it such an earthiness and freshness!
This recipe is seriously one of the easiest and fastest cocktails I have ever made and I love that you can make a single cocktail or turn this into a pitcher for whatever your weekend plans may be!
Cheers to the weekend friends (and good cocktails!)
- 1 Tbsp. Peach Jam
- 1 Tbsp. Fresh Thyme Leaves
- 1 Oz. Gin
- Champagne for Topping Off
- Combine peach jam, thyme, and gin into a mason jar and muddle it all together smashing the thyme leaves to release their flavor.
- Fill the glass with crushed ice and pour champagne over top until the glass is full.
- Garnish with extra thyme and serve immediately.
*Note if you want to make a pitcher of this cocktail, I would simply do 6-7 tablespoons of jam, about 4-5 oz. of gin, and 4 tablespoons of fresh thyme leaves (plus more for garnish). Make this part in advance so the flavors can combine and then right before you are ready to serve add champagne and then you can pour over ice as people are ready to drink it.
