Roasted Cornish Hens and Root Vegetables: My Diary of Us

Roasted Cornish Hens and Root Vegetables

I woke up this morning thinking it was Tuesday and to my surprise realized that it was Wednesday.  I love when that happens usually because it means the weekend is right around the corner, but in this case it just means that my days are passing too quickly these last two weeks here in Louisiana.  My days are packed full with lists, my work, and seeing as many friends as possible.  With full days like these I have been loving easy dinners that allow me to multi-task!  My roasted Cornish hens and root vegetables is the perfect meal to fix on those busy weeknights where you just don't have the time to babysit the stove!

You may or may not have cooked a Cornish hen before, but if you haven't I'm telling you they are just as easy as a regular chicken and are super tender and delicious!  Cornish hens are a certain breed of chicken and I love them because everyone gets their own bird where you get your white and dark meat all in one!  And even if you aren't usually a dark meat kind of person, the dark meat yes has more fat, but it also holds some serious nutrients that are especially good for women!

Citrus Ginger Smoothie: My Diary of Us

Citrus Ginger Smoothie

Hi friends!  How was your weekend?  The sun came out to play and we took full advantage of it!  On Sunday the weather was absolutely perfect...79 degrees and sunny with a breeze.  This is the kind of weather I have been waiting for!  We walked down to our neighborhood snoball stand, grabbed two dreamsicle snoballs where right next door they boil amazing crawfish, so we grabbed some of those too.  We had a picnic on our front porch and ate crawfish and snoballs all barefoot and happy!  Today, I'm back on track with healthy recipes now that some of my food aversions have left the building and I'm kicking the morning off right with one of my citrus ginger smoothies!

Citrus season is almost over, and I couldn't be more sad about it.  That's why I am getting in a few last recipes using all of my favorite kinds of citrus varieties.  My citrus ginger smoothie is packed with good for you ingredients and is a cinch to blend up for a breakfast on the go!

Irish Whiskey Mules: My Diary of Us

Irish Whiskey Mules

St. Patrick's Day is right around the corner which means that even if you aren't Irish you can pretend for the day and drink and eat all things green!  Here in Louisiana, we have a huge St. Patrick's Day parade that runs the Saturday before St. Patty's Day and really it's just another excuse for us to throw a party, get beads, and day drink.  Not a bad idea really, and we live right off of the parade route so we will be walking to partake in the festivities.  I will be serving up Irish Whiskey Mules for the day (for everyone but myself) and I gotta say I'm loving this twist on the classic Moscow Mule.

If you are a ginger beer lover, then you are going to love my Irish mule and it's perfectly green to celebrate the holiday.

Chorizo, Poblano, and Sweet Potato Quesadillas: My Diary of Us

Chorizo, Poblano, and Sweet Potato Quesadillas

I've confessed to you my love of all things carby right now, not that I haven't always loved carbs, but as of last week I am officially only craving meals that are heavy on the carbohydrates and low on the veggies.  I know....it's so bad, but the other night I had to choke down vegetables and I have never not liked vegetables in my entire life.  I haven't been sick with this pregnancy, so I guess food aversions are my dues being paid.  These chorizo, poblano, and sweet potato quesadillas have been perfect for me because they are stuffed with good for you ingredients while still satisfying that carb itch at the same time!

I absolutely love the flavor combinations in these quesadillas.  They are sweet, salty, spicy, and everything in between.  On top of this meal being flavor packed, they're super easy to whip up any night of the week and your whole family will be raving about this cheesy dinner option.

I am Woman: My Diary of Us

I Am Woman

"I, with a deeper instinct, choose a man who compels my strength, who makes enormous demands on me, who does not doubt my courage or my toughness, who does not believe me naive or innocent, who has the courage to treat me like a woman." -Anais Nin

Yesterday was International Women's Day and I loved reading quotes throughout the day that spoke to the strength that we as women have within us.  Each one was motivating, encouraged a strong community of women helping each other, and represented what I hope to be as a woman myself.  It got me thinking about what makes me feel like a woman and also about all of the other amazing women that I am surrounded by in my life.  I turned 31 last month, found out I was pregnant, and I tell you now more than ever I am proud to be a woman and excited for the evolution that will happen in me this year.

Strawberry Mojitos: My Diary of Us

Strawberry Mojitos

The weather dropped forty degrees from the time we went to bed last night until when we woke up this morning.  Whatttttt the whatttt??  Insane, yesterday the promise of Spring was here and just like that, poof...Winter came back to play.  The weather has been crazy all over the country and even though we are all pulling our jackets back out today, I've still got Spring on the brain.  And what better way to will Winter away than with a refreshing strawberry mojito?

I may be pregnant, (if you didn't see my announcement on social media, this is news to you) but that doesn't mean that I can't still enjoy a good mocktail!  And since we are moving at the end of the month I have to get in my cocktail hours with all of my girlfriends before we leave!
