The Beet Twist

I am getting in the holiday spirit, despite the weather being above 80 degrees since we returned home from New York.  I decorated my house, put up the tree, and have been blaring Christmas music all day everyday (I'm driving Canean crazy with it), but I secretly think he likes it.  My favorite thing to do every night has been cozying up on the couch with a book by the tree and perhaps a glass or two of red wine and have been thinking that maybe I should just leave a tree up all year long...that wouldn't be crazy would it?  Anyway, when we were in New York I had a beet cocktail that surprised me in the all the right ways.  I knew that this week I had to make a a version of it that would be perfect for the holidays!  The beet twist is totally unexpected in all the right ways, and it's basically like helping your body detox as you are drinking, soooo...it's good for you.

Green Onion, Dill, and White Cheddar Scramble

Here's a little tidbit.  When Canean and I go on vacation it's like our sole mission to eat our way through whatever city we are visiting.  Our bellies have reserve tanks that allow us to eat twice as much as we normally would.  It doesn't matter if we have just eaten, if we see something that needs to be eaten then we eat it...eat now, worry about the bloat later, that's our motto.  This New York trip was no different and since I ate like I have the metabolism of a 16 year-old boy for six days straight, this week I have to get a grip and I am all about starting my day with a healthy but filling breakfast.  My green onion, dill, and white cheddar scramble is satisfying and will give you the energy you need to get back in the swing of things after a long holiday weekend!

I am kind of obsessed with all things dill.  I of course love dill pickles, but I also love putting fresh dill in whatever I can squeeze it into...even cocktails!  Which you might find scary, but I find totally delicious.

Pumpkin and Apple Spice Cocktail

November has been a whirlwind and I literally cannot believe that this week is Thanksgiving!  I usually already have Christmas decorations up and this year I have nothing done!  I am starting to get a little anxiety about it like all the trees will sell out and I will be Christmas tree-less this year, which I know is a little dramatic...  I am hoping that our trip to NYC this week will be just what I need to get myself into the holiday spirit.   That, and a festive cocktail.  And since Thanksgiving is on Thursday I decided you might need this week's cocktail a smidge early so that you can run out to the store and get the ingredients in time to serve it to your guests this week!  This pumpkin and apple spice cocktail is super easy and delicious!

This cocktail is literally three ingredients and can be served hot or cold depending on what you are in the mood for.  It kind of taste like apple cider's cocktail cousin and is a whole lot easier to make at home.

Thankfulness: My Diary of Us

Thankfulness...

I woke up this morning after sleeping until 9:30, laying in bed enjoying the quiet house and a few moments where I was alone with my thoughts.  Canean had gone hunting with his dad and the dogs were sound asleep in their beds.  It was the best kind of morning after being out of town for the past week and a half. 

I took this picture of my arm where the saying "no place I'd rather be" now has a home to remind me of appreciating this life and this moment that I am in...probably because I am still getting used to it living there.

Slowly, I made myself get out of bed right as Canean was coming home with coffee and a scone in hand for me which made waking up a little easier.

Sausage, Sweet Potato, and Sage Frittata

Hi, it's me...Leigh Ann, the girl who disappeared on ya for a couple of weeks.  I know I am horrible and you have probably been starving because I have not been posting my recipes regularly...or maybe you actually can survive with me, but I don't like to think about that.  So let's pretend your life hasn't been the same without my usual posts to keep you company.  K?   I am here to feed you today, and the recipe is really good, so maybe you can forgive me, just this once.  I have the perfect brunch for your Thanksgiving weekend to make you a rock star in the eyes of all of your houseguests.  My sausage, sweet potato, and sage frittata is super easy, you will have most of the ingredients already, and it will knock everyone's socks off in the taste department.

We all know that when Thanksgiving rolls around you buy too much of everything just in case something goes wrong.  If we are lucky, nothing goes wrong but then we have a bunch of leftover herbs and other ingredients and then what?

Grapefruit, Ginger, and Sage Fizz

I skipped last Thursday's cocktail and I apologize because I know it was hard to go about your weekend without a cocktail.  But it's ok because this week I have the daintiest, prettiest, and most delicious drink for you.  It's definitely a girl's brunch kind of drink and I 'm not thinking the men in your life are going to approve all that much...but who knows, Canean has been known to like a girlie drink here and there!

Grapefruits are just about to come into full season here in Louisiana, and we are pretty lucky to have local ones that grow during the winter months.  I eat them like an orange, just peel and eat no sugar necessary.  For some reason I grew up only slicing them in half and sprinkling sugar on them before eating them, which pretty much cancels the healthiness right out.  It wasn't until about five years ago that I just ate one like I would an orange and I loved it!
