Roasted Chipotle, Satsuma, and Rosemary Chicken

Tomorrow I leave for California and I have a list of to-dos a mile long today to get ready for the trip.  One of which is cooking a couple of easy meals for Canean to eat so he doesn't end up at Jimmy John's every night for the next eight days.  I like to make things that he can eat two or three times and that are easy for me while I run around like a crazed person...it's all in the multitasking!  This roasted chipotle, Satsuma, and rosemary chicken is amazing guys and really easy too, and today I need easy.

I know while your other favorite food bloggers are posting turkey recipes already I am posting this chicken recipe, but honestly you could do this exact same marinade and rub on your Thanksgiving turkey and it would be a A-MA-ZING!  I might be a little behind schedule this year with my holiday preparations, partly because we are heading to NYC for Thanksgiving and I am not in what I am going to cook mode, but I promise I won't let you down.

But back to this chicken though....I'm being so serious when I tell you that this chicken is out of this world.  Smoky chipotle mixed with sweet Satsuma juice and fragrant rosemary makes for a killer combo that you are going to love.

Farm to Fork: My Diary of Us

Friday Catch Up

If you follow me on social media at all then you know that last night was our very first Farm to Fork dinner that I collaborated with Maker's Workshop, Country Table Delivery, and Red Onion.  This week has been a crazy one and last night made it totally worth it because the night could not have been any better!  It was a community gathering where local people came together to donate their time and talents and spent an evening getting to know each other and ate an amazing dinner with all farm fresh and local ingredients!

We Must...Live

Do you remember your first trip to Disneyworld as a kid, or maybe the first time that you saw the ocean?  Remember how excited you were to live, to experience new adventures and how even the smallest new thing was always...always the best thing?  And then we grew up.  We started taking life and new experiences for granted and we stopped living life with the gusto of our ten year old selves.

Unless you are my husband...

He is kind of incredible in that he still has that childlike enthusiasm for life and new adventures.  It's one of the qualities that I love the most about him.  Canean is always up for anything, soaking up new experiences like a sponge determined to not let the world take the boy inside him away or take away pieces of the man that God created him to be...wild at heart.

Butternut Squash, Kale, and Wild Rice Salad

Happy Monday guys!  How was your Halloween weekend?  Did you eat too much candy?   We actually didn't get to eat that much candy because we ran out of the goods Halloween night, which was a good thing, but I may or may not have eaten too many of those pumpkin bars that I posted on Friday.  I can't resist them at all, and if you missed the recipe then you need to make them!  Since it's a new week and a new month,  I will be de-sugarfying my body starting with this healthy and really delicious butternut squash, kale, and wild rice salad! 

When we were in Florida two weeks ago, my friend Meg made us a wild rice salad with a ton of veggies and grilled chicken.  It was so good y'all and I loved the idea of tossing whatever veggies you have in the fridge with some rice and making a meal out of it!

Caipirinha Crush

Remember that Brazilian drink that I told you I drank while we were in Miami?  It's basically like the Margarita of Brazil and I'm slightly obsessed.  Since I have had a hard time getting back into the swing of things from vacation I decided that I would whip up a batch of my new favorite drink and pretend I am still on vacay.  That's acceptable right?  These caipirinha crush's are so easy to make and super refreshing too.

It's made with a Brazilian rum called Cachaca which is made from sugar cane, you sweeten it with sugar or agave in this case, and lots of fresh lime juice.  If you love margaritas, I am going to go ahead and say that you will love this drink and it just might...just might...give your margarita a run for it's money.

Hobe Sound: My Diary of Us

Hobe Sound

We spent the second half of our week in the cutest beach town called Hobe Sound.  Our friends Meg and Mike live there with their brand new baby, Asher.  We fell in love with this sleepy little town when we visited them in February, and could not wait to get back!  The laid back vibe was the perfect end to our week in South Florida.  We did all of our favorite things with two of our favorite people and just reconfirmed that we wished they lived closer to us.

You know those friends that it's just easy when you visit each other?  No one expects too much, everyone can go with the flow, and both you and your spouse like the other couple equally as much?  That's how it is with us.
