Happy Monday guys and gals. It's week two of the new year and I know most of you have committed to eating healthier, or lighter, or are doing Whole 30, or Weight Watchers or something to that effect. And I also know that it can be intimidating and you run out of ideas and the thoughts of weeknight healthy meals can be daunting so I am here to help you. After the holidays I can tell you that me and my family were more than ready to get back into our routine in more than one ways, but mostly in our diet! Give me all of the healthy foods please and give them to me now! Who is with me? My quick and easy Asian Salmon Packets are going to be your new favorite weeknight meal that your whole family will approve of!
Happy Monday guys! My mom has been in town for the past week and leaves today which is always so bittersweet for me! Even though I hate to see her go, before that I was out of town for a few days so needless to say my schedule and diet have been all over the place! I am looking forward to getting back into a routine this week and getting back on track with our meals! One of my favorite ways to do this is by having nourish bowls for dinner or lunch! I love knowing that every bowl is packed with nutrition that will give me energy, keep me full, and satisfied! My healthy autumn nourish bowls are just the kind of meal that I need to get my body back on track!
Life has been busy lately, kind of crazy if I am being honest. But then again that's mom life right? That means the days where I can prep dinner in advance (aka naptime) and know that I have a nutritious and filling dinner ready to go for my family are the best days! I am a big fan of recipes that are comforting, filling, and delicious all the while staying on the nutritious side! My easy pumpkin and sausage baked ziti made using Barilla ProteinPLUS pasta is the perfect dish to make any night of the week!

Being a mom sometimes means being super woman it seems. There just aren't enough hours in the day to do everything we are "supposed" to be doing. Between keeping up with a toddler whose mood changes from one second to the next, running errands, getting my work done, and trying to find a moment that I can have to myself, I'd be lying if I said dinner didn't sneak up on me from time to time! This just adds to the crazy that is motherhood which is why I make my life a little easier and keep Red Baron pizzas in the freezer for hectic days where I need an easy dinner! I like to whip up the ultimate Italian sub salad to pair along with a couple of pizzas for a quick and tasty meal the whole family will devour!
This week has been a dreary one guys. Rain every day and also forecasted for the foreseeable future! Whomp whomp. I just couldn't live in a place without lots of sunshine because I would eat all the things and take way too many naps! This kind of weather makes me crave comfort food of all varieties and since I grew up in Tennessee, a serious comfort food for me is homemade fried chicken! That's why you have to try my delicious homemade Nashville hot chicken anytime you are craving something comforting, a little decadent, and utterly mouth watering!
