This week has been a dreary one guys. Rain every day and also forecasted for the foreseeable future! Whomp whomp. I just couldn't live in a place without lots of sunshine because I would eat all the things and take way too many naps! This kind of weather makes me crave comfort food of all varieties and since I grew up in Tennessee, a serious comfort food for me is homemade fried chicken! Somehow the summer is already almost over, which means school is about to start back up. Happy almost 4th of July guys! We just got back from the beach yesterday and I am super excited that this week is a holiday week to help me ease back into the swing of things. Happy happy Monday friends! How was your weekend? We had a great visit to Louisiana where we ate too much (as always), got to see friends and family, and came home yesterday to a gorgeous Texas afternoon! We spent the day in the backyard soaking up every second of the perfect weather that is for sure not going to stay around for very long! It's days like these where simple meals to me are the best meals. One, I don't want to take too much time in the kitchen away from my guys and two, days like yesterday make me want to eat a light and fresh meal that the whole family will be a fan of. The weather has just been picture perfect lately and I know that means that the real Texas heat is about to be here in a matter of days, but for now it has been so lovely. We have been spending every second that we can outside in the sprinkler, at the park, blowing bubbles in the backyard...whatever! My boys and I love to be outside whenever possible and so I have been thinking of ways that I can get dinner on the table without having to make Parks come inside while I'm doing it!
