Easy recipes have been saving my life lately. Parks is officially on the move and getting into everything! I almost always eat my breakfast and lunch standing up in between chasing him around the house and needless to say, this mama is whooped by the end of the day. Pouring a glass of wine is sometimes all the energy I have left in me...truth. I make salmon once a week because, number one it is so good for you, and number two it can be ready in 12 minutes! That's why my recipe for easy salmon on the stove is perfect for any night of the week and especially for tired mamas.
Can someone please explain to me how it is almost July and how I am going to have a 9 month old baby? Where has the time gone? This year is flying by entirely too fast for me and I need it to slow down. We've had a lot going on the past month with Parks having surgery among other things and one thing that has been a lifesaver for me is easy dinners! I have been making lots of 30 minute meals lately because I just don't have time for much else! I am sure you can relate with kids home from school, vacations, and all of the other busyness that comes with summer. The days are disappearing and dinner time rolls around without any warning leaving your hungry family staring at you wondering what will be on the menu for the night. My Greek chicken pasta salad is going to be one of your new favorite easy meals that will fill up your "people" while keeping it somewhat healthy at the same time!
I've been back in the kitchen this week cooking for My Diary of Us (finally) and dang, it feels good. With so much going on in my life right now, both work and personal, I have been neglecting this space that I have always loved coming to. I'm jumping back in with baby steps and just kinda feeling my way back into the groove of it all. But, with the said, I am jumping back in with an ultimate summertime recipe that you are going to want to make at your next barbecue...or if you are obsessed with grilling like me, then you will want to whip this one up on any ole night of the week. I know I do, and especially now with a baby, having my favorite easy recipes in the back of my brain at all times can be a lifesaver on hectic days. I tend to make lots of salads these days, mostly because I can whip one up with whatever ingredients I have in the fridge on any particular week. That being said, I also get a little bored with salads and need to throw in a different salad from time to time. My easy taco salad is one of those salads that I tend to forget about, but every time I make it I'm like "dang this is so good, why don't I make this more often." So here it is, the salad that will change your outlook on weeknight salads and I promise even your hubby (and kids too) will be super pumped about having this for dinner on a weekly basis!
This week started out a little rough, I am not going to lie. Parks had his first tumble and hit his little nose on the coffee table pretty good leaving a little bruise and scrape and basically scared me to death. He was fine after he calmed down, and I on the other hand was shaken for the rest of the afternoon and was sure we needed to go to the doctor. It was a long day , and on days like Monday (or any day really), easy dinners are necessary and there isn't anything more simple than whipping up a fantastic salad. My pear, goat cheese, and pork tenderloin salad is literally on weekly rotation in our house and you are going to love it too!
It seriously feels like forever since I blogged a recipe. I am trying to get back into the swing of things now that all the recipes in the cookbook have been completed, and slowly but surely it is all coming back to me. Getting back into a routine with not only work, but life in general has been much needed.
I was on a roll last week with working out, eating right, and getting back to some kind of regimen and then bam that stratchy throat feeling came at me hard on Friday. I knew it was coming and even though I tried to drink it away with ginger tea and vitamin packed smoothies, it just got worse. Turns out it was a nasty sinus infection and I am finally feeling somewhat better after a few days on antibiotics. I don't know about you, but when I don't feel good I crave soups non-stop. There is just something about the warm broth that makes me feel better instantly. My pozole rojo with pork is just the kind of soup that I want when I am sick (or not sick honestly) and I think that you will love it too!
