Tacos have a special place in my heart and I’d say we have them at least once a week for breakfast or dinner. I love coming up with new combos that are a little bit unusual. They usually start as an experiment and end up as my new favorite recipe! To me, that’s what cooking is all about. I am not sure when Taco Tuesday became a thing, but I am totally on board. For one I love tacos (duh), but secondly I love that every week I can use this day as an excuse to make some sort of taco and I don’t have to think about what’s for dinner! There is a taco phenomenon going on right now and I have to say I am not hating it! I love all kinds of tacos...who doesn't right? We have breakfast tacos once a week in our house and sometimes will have another taco recipe for dinner all in the same week! My hubby would eat tacos all day, everyday if I would make them for him, and our toddler is just as crazy about eating them too! (Like father, like son!) I love making my favorite foods like tacos at home because I can control the ingredients and make them a bit healthier, which means we get to eat them more! The weather has just been picture perfect lately and I know that means that the real Texas heat is about to be here in a matter of days, but for now it has been so lovely. We have been spending every second that we can outside in the sprinkler, at the park, blowing bubbles in the backyard...whatever! My boys and I love to be outside whenever possible and so I have been thinking of ways that I can get dinner on the table without having to make Parks come inside while I'm doing it! And since I love to grill, it's the perfect solution to dinner and in preventing a toddler meltdown.
