I use our grill about 90% of the time during the summer months. I find myself cooking just about anything and everything on it from meats to veggies to pizzas! We have a few weeks left of summer and I am taking full advantage in the kitchen. I'm whipping up light and healthy meals that I can grill up for a fast dinner almost every night of the week right now. With kids back at school and vacations officially over for the year, schedules are getting busier and busier and no one has the time to worry about dinner. My grilled pineapple and shrimp skewers are super healthy and fast and you can feel great about feeding them to your entire family.
At this point, I have officially declared my love for figs. Those little plump fruits that I basically went my whole life only eating if they came in the form of a Fig Newton, because for some reason until I moved to Louisiana, I had never eaten a fresh fig. I know...right? I was missing out big time. I'm glad we were formally introduced and now have a relationship with one another. A relationship where I devour those little beauties and make delicious recipes out of them. My fig, honey, and prosciutto pizza has been my go to summer pizza because the salty and sweet flavor combinations are so good that I'm going to apologize for not getting you this recipe sooner.
Seriously, it's easy, delicious, and you will want to make it at least once a week while you can still get your hands on fresh figs. If you have some fig skeptics in your family, make this pizza and I guarantee you that they will love it!
And really what is there not to love? Crispy, honey coated crust, spicy balsamic onions, sweet figs, salty prosciutto, and fresh peppery arugula. My mouth is watering just talking to you about it.

I crave wings like most grown men crave wings and I like to blame that on my husband because I didn't really find a true love for the food until we were together. Wings happen to be one of his favorite go to "splurge" meals and I usually join in on the festivities. You aren't surprised are you? And because I love them so much I decided that I needed to make them at home and that way I could make them a little healthier. So I started making grilled buffalo chicken wings and wedge salads for a side.
I have told you before, but just in case you didn't know, we have an awesome farmer's market where I live and one of the chicken farmers sells skinless wings! They are so delicious and with the skin gone it cuts down on fat immediately. I get them almost every week because I love them so much. If you can't find skinless, don't worry you are still going to healthier with this recipe! Instead of frying the wings, I grill them and then instead of French fries or some other unhealthy side we usually end up getting, I make a salad inspired by the blue cheese dressing and celery served with traditional wings.
It's the perfect light summer meal and it satisfies that wing craving that I get so much and I don't have to feel bad about it at all. If you are a little skeptic, it's ok just give them a try and see for yourself!
